- INGREDIENTS
Rice - 600 gm wash and soak for 30 min
BIRYANI RICE -
Water
Bay leaf - 2 nos.
Cardamom - 2 nos.
Clove - 3 nos.
Cinnamon - 1"
Coriander leaves - a little bit chopped
Ghee - 2 tsp
Lime juice - 2 tsp
Salt - 2 tbsp ( water should be salty)
BARISTA
Onion - 5 nos.
Thinly sliced and deep fried
BIRYANI MASALA
Fennel seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Coriander seeds - 1 tbsp
Black pepper - 1 tsp
Javitri and Jaifal - a small piece
Clove - 4 nos.
Green Cardamom - 4 nos.
Cinnamon stick - 1"
Bay leaf - 2 nos.
CHICKEN MARINATION
Chicken - 750 gm
Ginger garlic paste - 2 tbsp
Salt to taste
Red chili powder - 2 tsp
Turmeric powder - 1 tsp
Kashmiri Chilli powder - 1 tbsp
Biryani masala - 1 tbsp
Chicken masala - 2 tsp
Desi Ghee - 1 tbsp
Coriander and mint leaves chopped
Curd - 3 tbsp
Lime juice - 1 whole lime
Fried Onion ( Birista)
***Marinate for atleast an hour***
TO COOK THE CHICKEN
Ghee - 1 tbsp
Mustard Oil - 2 tsp

Here's a tip : If you let your chopped onions rest in sunlight for a few hours, the bilista will be more dry and taste even better

Btw a small suggestion that it isn't the way to fry the onions... To get perfectly golden brown fried onions pour very less oil bt a bit more than the amount we pour for shallow fries😊or else the onions will jst form a sticky ball😊

Why did u fry the chicken before layering the rice? U can put the raw chicken as it is and let it cook on steam.. that's what is a biriyani
So when you make a classic "Chicken Dum Biryani" you need to cook the chicken first, so that's basically "Bhunna". The biryani that you are talking about is "Hyderabadi Biryani" wherein the chicken and rice both are raw and cooked together in a single pot. Thanks for the question, keep supporting !! 😊
