I think If you need to sacrifice one soul to get the soul stone then you can have one soul to live with when you return soul stone. And that's how cap grew old with Peggy and that didn't branch the timeline..

It would also be fun to see how the timeline changed when Thanos from the past died and the events of Infinity War didn't happen at all in the new timeline in which Steve Rogers started SHIELD with Peggy and Howard Stark, and also saved Bucky much before from Hydra.

The dark Avengers story line could be epic , when team- Cap were on the run from Ross and US government. Steve rescuing his teammates from the raft prison and then reunion with Natasha at the beginning of infinity war. Plus Sam and Steve's bonding could lead a potential reason for what he choose Sam to be the next captain America. And they can easily create a romantic angle between Steve and Natasha on the foundation of Captain America- the winter soldier and the airport battle of civil war where she let Steve escape.

This ideas are definitely awesome, but I think it would be better to explore new stories, rather than the existing storylines. And still, it feels like couse of more quantity, marvel is not reaching the potential of ongoing Disney+ series.
