I want to make this so bad! I don’t have a cool place to store it. Maybe I could just cure it during the winter? In the garage? Or maybe get a mini fridge that I could hang it in somehow? This looks soo good.
Love your videos but you dont elaborate on the conditions of the drying room temp and humidity and or types of mold. Can you explain this better. Im 2nd generation Siciliano and northern Italy but my grandparents were older and never passed down this information. Thanks
if you have a cool place to store it in its fine room temp wont work, for wild game because no fat salting will be half the time or you will dry it out. For deer i would store it in a cold room if you have.
So u don't use the lard to hang it. You don't have a problem with the bugs going on it? I want to try this and every video I see is with lard. Also when it's done in a year do u soak it in water before u cut it to soften skin or the way it is u cut it

@@thatsaromaarrustiemangiama113 Do you ever have issues with mice? I am in the midwest and they find any crevice they can to get in. My garage stays about 45-50 in winter, but I am concerned with mice. I am looking for a cheap fridge to use for aging, but I haven't found one yet.

in a cool place there wont be also the pepper on the outside deters them
That's why you use the peppers.
some , like me wrap it in cheese cloth just to be safe.

I don't use any spices when I make prosciutto. Its not like capocollo..
The first 10 days when you salt it, is it at room temp or in a refrigerator? Trying to make it from a deer leg

No I dont use lard although you can I dont I spray every few months with a light mist of wine I never get bugs ever. Do not soak it Good luck!

Yes another reason I start in the winter months from Nov till march to start then while hanging its ok in the garage but you dont want it to warm
