The water in the sprinkler pipe comes out black and really smelly for the first few seconds; the reason is because the sprinkler pipes are what is called black pipe, with the water sitting in the pipe for a long period of time it picks up the oils and rust that naturally come out of black pipe. There was another comment about the pipe being filled with air, those types of sprinkler systems are used in areas where the pipe can get cold and freeze the water. Where I live dry systems are used in un heated garages, outside overhangs etc..

For those still wondering the black liquid is just normal water mixed with dirt, dust and a little bit rust. How a fire suppression system work it use air to hold the water back so when a sprinkler head breaks the air is released and let the water flow. This also send a signal to a fire panel that there could be a fire.
In Aus the waters there, it has a glass ampule that shatters at a certain temerature releasing the water and the drop in water pressure sets off the alarm. Because they use steel pipe due to pressures its normal for there to be some corrotion in the pipe itself.
There are two types of systems. Inside conditioned spaces the water is at the heads. A dry fire system for outside space which could freeze use compressed air to hold the water back inside conditioned spaces to prevent freezing condition from damaging the piping and heads. You are correct why the water is nasty.

That said, water in fire suppression systems usually sits up there for years and picks up all sorts of unpleasant crud from the lines, and when it finally gets used is filthy and makes a horrible mess.
