Chopping boards can not be of stainless steel, for a fact none of the restaurant uses stainless steel chopping board as it hampers the edge of the knife. Chopping boards are made up of food grade plastics which are colour coded, green for vegetable, Red for raw meet, yellow for cooked meat, white for dairy & breads, brown for cooked vegetable, blue for seafood. They are scrapped/shaved using a scrapper/shaver every week and washed and stored properly dipped in 100 PPM chlorine solution. I am myself a Chef with the Leading Hotel group of India. So you can trust the information Mr. Bindra.
