The BEST Chicken Pot Pie

  • Ingredients
    Crusts:
    2 1/4 cup all purpose flour
    1/2 tsp salt
    1/2 cup light olive oil
    1/2 cup milk
    Filling:
    3 tbsp butter
    2 large chicken breasts
    1/4 cup flour
    1 12 oz bag of frozen mixed veggies, cooked
    1 1/4 cup chicken broth
    1 cup milk
    1 1/2 tsp salt
    1/2 tsp pepper
    1/2 tsp poultry seasoning
    Instructions
    Crust:
    1) In a large mixing bowl, mix together your flour and salt.
    2) Add your oil and milk, and stir until your dough forms. Split your dough in two.
    3) Lay down a sheet of wax paper. Put one dough ball down, then put a second sheet of wax paper on top. Roll out your dough. Do this for each dough ball, then set them aside. (Tip: you can use a pizza cutter to round out your edges and make a better circle).
    Filling:
    1) Boil a pot of water, then add your chicken. Once it’s fully cooked, shred it and set it aside.
    2) In a large skillet, add your butter and flour. Stir until it’s blended well, then add your chicken broth a little at a time while stirring. Do the same with your milk.
    3) Add your seasonings and continue to stir until it thickens.
    4) Add your chicken and stir well. Then add your cooked frozen mixed veggies and mix well. Set aside.
    5) Spray a pie pan with nonstick cooking spray. Add one pie crust, then add all of your filling. Top with the other pie crust. Poke a few holes in the top with a fork.
    6) Bake at 400 for 30 minutes. Let it rest for 10 minutes. Enjoy!
