    400g brown miso
    200g white miso
    4 egg yolks (medium-sized)
    160g butterbur sprouts miso
    260g sugar
    120ml mirin
    180ml aske
    a little yuzu juice

    先日、お店で頂きました。苦みなどではなく、ふきのとうの旨みが100%引き出されている逸品でした。はしたなくスプーンまで舐めてしまいました。
