I wish tether tools could make a cable to run remote camera exposure ramping via an iPod mini for when I go on hikes to shoot time lapse, as taking my MacBook Pro just isn’t an option

If you have an iPad with a USB-C port, you can use that to connect your camera directly to the iPad. It is also possible to use an Apple adapter to use a USB-A cable to connect to an iPad as well. Both methods can be used successfully to tether.
Naturally, you would need tethering software on the iPad in order to achieve what you have described. You may want to look into either Capture One Mobile or Cascable to see if either is a good fit for your needs.
