Seitan (vital wheat gluten) is made from the gluten component in dough that is insoluble in water, usually extracted from grains such as wheat and barley.
Many vegetarians use seitan as a substitute for meat.

Seitan is the best meat replacement as far as I'm concerned, speaking purely from a taste perspective. Delicious.

For me I love to make a dish with seitan and pork. Tastes much better and is a classic Chinese dish. Seitan that is not fried is impossible to find where I live so I plan to make my own.
I never had seitan like this, I have tried to make it myself at home a few times as it's hard to find where I live, but the ones I made always just tasted like dough 😓. I always use textured soy protein as a meat replacement.
It all depends on your seasoning game. Without seasoning it tasted like nothing, no flavor.
You’ve got to simmer the raw dough in a broth first over an hour & then leave it in the fridge overnight soaked in the broth liquid.

他這個麵糰就是我們俗稱的麵筋嗎麵筋不是豆子類產品嗎怎麼搞的好像是用麵粉做的

豆類的是豆皮,豆漿,豆腐
我也這麼想可避免踩踏過的麵粉也一起下去制作

在家也可以做,洗完面团出来就是面筋了,洗面的水放置一几十分钟后把沉下去的面摊薄蒸出来就是面皮,然后准备酱油,醋,芝麻酱,辣椒油,黄瓜丝,花生碎等看自己喜欢就是凉皮了😊

To make this, you need to take dough and then wash it underneath water until the water turns clear than you were left with nothing but the gluten instead of all of the starch. The gluten is the protein, and now you can use it like meat.

Do they mix soya flour with gluten? In our country a variant of seitan called soya chaap is available which contains soy protein to balance the amino acid profile of seitan. Here seitan is wrapped on popsicles and sold in the dairy outlets.
Where do they sell this. Never seen it before. You normally have to make it the hard way from wheat flour.

炸過的麵筋味道上希望能改良 煮的時候油耗味和焦味讓麵筋這樣好的食材變得不好吃
煮之前,要用水煮過,把工廠的炸油煮掉,豆包也一樣,當然最好是自己炸😅
麵輪煮之前,先用電鍋加水,水煮過可以去掉多餘的油脂和油耗味
