I think the sudden death means: By clearing the gems, you are fighting the ice storm, some being effective, while the others are useless. The more you go, the ice pillar going faster, means your resistance is being reduced and it becomes more struggle to survive. Finally, when 7:30 marks (not sure what this number means though), you are out of strength, and there’s nothing you can do to fight back anymore, only luck will keep you alive for a few seconds before you get freezes to death.
It also happened to me in Bejeweled Classic on my phone I hit the 7:30 mark and instantly ended my game so sudden death is not only on pc or Mac version it’s also bejeweled classic on IOS and Android
If it uses the same metrics as the Nintendo DS port, the first phase maxes out in speed after a while, but the second phase continue to accelerate the longer the game goes on. (It happens that on the PC version, the acceleration is set to max once the 7:30 gametime has reached)

That doesn't look like sudden death. It sure would take luck to get past it, but luck is the basis of Bejeweled gameplay.
