Reverse sear sounds cool and looks delicious. Double fried fries are very good. I microwave whole skin on potatoes. Then I cut them into fries, spray them with olive oil and air fry them on 400T till crispy, golden brown. I love that film. Mouth watering meal there Stephen. Enjoyed watching you again. I asked Siri and the answer was a fluffy interior and crispy exterior. Yeah, when you get a certain age usually glasses are a must. I have to learn to wear mine more. Didn't use hydrogenated lard but still used Hexane heat treated seed oil in the guise of vegetable oil.
