    In Bengal, we dry roast the moong dal and then rinse it off, once or twice. Hence we don't add ghee at the roasting step.
    The ratio of rice and dal is always 1:1 in Bengali style khichuri.

    Khichuri is a rainy day comfort food. I'm a Bengali from Meghalaya and we eat Khichuri regularly as it rains here a lot. We make "non-vegetarian" (according to Bengali food rules if onion and garlic are added to a dish then it becomes non-vegetarian even it is technically vegetarian/vegan if butter or ghee is not added) khichuri with masoor daal and eat it with aloo bhaja (fried potato) and omlette during rainy days😋😋. The khichuri you made looks so delicious, apt for a rainy day.

    Hyderabadi khichdi is cooked like a pulao too,and we often use masoor dal / lentils with rice accompanied with mince meat(kheema), imli + sesame seeds+ green chilli and mint leaves chutney, imli ka khatta and some papad.

    In Karnataka we prepare Bisibele bath ( In kannada Bise= hot and bele=dal) powder and store it. Whenever we want to cook something urgently we just put that powder and cook it. It turns out to be a tasty and fulfilling dish. Thank you for different kinds of khichadi Recipes ❤️

    Ranveer, after watching your very beautiful episode of 4 types of Khichdies, i was so happy, because i always love khichde and that too with lot of Hing and Ghee, and today i learned to make 4 types, thanks Ranveer for teaching us different Indian type of khichdes with so much patience and spending 4.5 hours in shooting this episode.
    Ranveer one more thing i would like to add pls add alll type of Indian Foods so that we are able to learn all types of Food.

    I love Ranveer because of his respect towards other cultures. He pours his heart into each dish trying to maintain the authenticity of the dishes, I can't say about the rest but as a Bengali that's the exact representation of my Maa's Khichuri.
    Also the informations he provides during cooking I collect them and show off my knowledge about food to my friends 😝🤭

    Also Khichadi in our Maharashtra i.e Nashik, Jalgaon n Dhule district are almost similar to each other and hav their own legacy. It's a alternate day dinner menu in almost every house❤️ Khandeshi Masala is the key ingredient of it

    Hi Chef, thanks for the varied recipes. My granny taught me moong dal is light and healing for stomach, so to keep 1:1 ratio. It also cuts the stiffness/starch of rice making it more flowing. Rest of the dals are heavy, so to use less if using those. 🌸

    In khandesh we prepare khichdi in a bit different way .. and eat with urad papad and the best part is the remaining khichdi is eaten next morning and we literally fight for it it's that tasty😄
