Fry the quartered tor-tee-yahs before adding them to any casserole. They will soften up during cooking (but not fall apart) and taste almost meaty. Frying them crispy makes a huge difference in your dish.
You are serving a LOT of people. So I thought I’d just mention a trick a friend of mine used. She had 6 children under the age of four..two singles and two sets of twins. She added whole drained corn to her meatloaf. It was so good I don’t make it any other way now.
Oh my goodness!!! I took care of my mother for 8-9 years before she passed, it was just a few months back so it feels very strange to say that. But she never once mentioned not being able to eat red meat…I certainly hope I didn’t mess up with her care. 😳😢
I hate to be a bad news bear but hun, ur dishwear, especially the plate w the cornbread layered hamburger jalapeno dish, the paint on it for the decoration, has lead. I had those same plates n had to throw them out. That dish looked good but I'm not a jalapeno fan lol I'd sub out the jalapenos for bell peppers, onions n washed n rinsed black beans. Nummerz!!!
