Easy Pumpkin Cookies | Whole Food Plant-Based

Ingredients:
1 -15 oz can pumpkin (1 3/4 c)
½ cup unsweetened applesauce (or date paste)
1 tbsp pumpkin pie spice
1 tsp vanilla extract
1 tbsp ground chia seeds
1 tbsp flax meal
2 cups rolled oats
Optional:
Add in chopped dates, dark chocolate chips, dried fruit, or even diced apples/pears
Directions:
o Add all ingredients into a large bowl
o Mix ingredients until well combined
o Scoop out batter evenly to form twelve cookies on parchment paper
o Add in chopped dates or any other additional ingredients
o Bake at 350 degrees for 20-25 minutes
o Enjoy!

Made these today (10/24/22) to take to a bake sale for Portland Singing Christmas Tree -- they went over very well! Plus, I had something that I could buy and eat for myself, to help with the fundraiser. :)
I love that you use whole oats, no salt, no oil, butter, refined sugar, or eggs! I just made these and added medjoul dates, almonds, raisins, sunflower seeds, and a few vegan chocolate chips. Yum. Thank you so much for this recipe! I needed a breakfast recipe. These will be great for that on the go meal or snack.

I made these and used molasses instead of apple sauce and they were yummy and moist !!! :-)
Great that you posted the amount of pumpkin as I am going to substitute buttercup squash. My husband has a sweet tooth so I will probably add the dates to the batter. The idea of pieces of dates on the top is a great idea also but I don’t like to take the time , for me easier to put in the batter.

I just made these. And the cookies are so good! I put cranrasins and vegan chocolate chips on top. I like how it's not super sweet. I will probably add more pumpkin spice next time or cinnamon. 🥰
I made this recipe. The batter was good, but not sweet enough for us. I added a tablespoon of date syrup since I had it on hand from another recipe. I also added some honey too. I also added dried cherries and walnuts. These cookies were really good! Thank you for this great recipe!

I have made this recipe twice now, it is very good! Out of curiosity, I plugged it into cronometer, and if you weigh each cookie to be about 40-42 grams, the recipe makes 19 cookies, and each cookie is 50 calories.

Hi!!!. I'm excited to try this recipe🤗. Do you think it would still work if I use oat flour ( pulverized oats in my blender) instead of whole oats?. To make them look more like a "traditional " cookie?. Some of my family members wouldn't eat them because of the whole oats 🙄🙄🙄. Thank you again for another great and easy recipe 😋.

OK, you are one of my favorite WHPB channels. I love your recipes. But when I see a recipe where the items in the recipe, are also recipes (can of pumpkin, apple sauce), my heart just sinks a bit. OK, I live overseas where we don't have "can of pumpkin" or even applesauce, and I guess most people in America can find those easily. But still (and as a WFPB channel) it would be nice to try to stick to starting with the whole food (pumpkin, apple) a little bit more. Anyway, the Krocks just uploaded an apple sauce video, so I plan on trying that and having the apple sauce.
I'm sorry for criticism, I really support what you do so much. I love your format with your explanation video over the mixing. And I love that you are no - Salt Oil Sugar also.

Hey Britt, could you please let me know which spices make up a pumpkin pie spice, as I have looked in loads of different stores here in New Zealand but I have not been able to find a pumpkin pie spice mix and I will need to make up my own pumpkin pie spice mix. Thanks.
You could ask 'google'. I have asked them about spice mixtures for Indian food. Hope this helps.
Should say on can of pumpkin. Cinnamon, cloves, ginger, maybe some nutmeg
I really enjoyed watching you in the kitchen, cooking. I’m not such a fan of this format, having you sit on the sofa and talk, and the overhead camera for cooking demonstrations. It’s so much less personal.
