A Hungarian blin is a Palacsinta. But the recipe they have includes sparkling water. Clearly not something I would put in mine when cooking.

Not opened milk doesn't have to be refrigerated Boris, it's pasteurized just like бабушка's jam. You have to put it in a refrigerator after you've opened it because bacterias get in and start to multiply. Love from bulgaria.

suggestions:
1. you need to use fine ground flour, what you used is for other things
2. no sugar, or only a little bit. makes it stick down and burn.
3. put a bit of oil in the mix itself, then add a few drops to the pan after every three or so ones done, when it starts to stick. the first one will be gross and greasy no matter what, it is normal.
4. you can use quite a big flame. when it is ready to flip, it should peel off easily.
5. you set the consistency with the sparkling water. too thick pancakes, add more water. too thin and tears, overdone, add more flour maybe. the bubbles make the pancake lighter. some people only use milk, theirs are thicker and heavier.
6. a mixer is useful for nice smooth consistency
5. try it with spinach filling, it's pretty good
