The Japanese sake making adventures ramp up! Production of the magical koji - sake's saccharifying wonder - continues alongside rice washing and soaking. And see more of beautiful Sado Island as we journey to Obata Shuzo's rice fields and check out the island's rare Toki birds - the Japanese Crested Ibis! All this and much more in Day 2 of 'Making Sake on Sado'!
In the summer of 2021, I spent one week making Japanese Sake at Gakkogura - a brewery school run by Obata Shuzo. Now, you can join me on this adventure in a multi-part documentary series exclusive to Kanpai Planet.

Absolutely fascinating and very, very interesting... Impressive stuff Mac! Great to see the amount of detail and precision that goes into all these individual steps to create sake. Glad to see a man appreciating a good bagwashing- it's definitely important and often underrated. I'll see myself out
Thanks Menno. It's a tough drink to produce, and that's not even considering the bagwashing!
Thx. Mac ... the education continues .. You have it in the "Bag"......... cheers
Nice one John! I love that!
Thank you for letting us accompany you on this fascinating journey!
Thank YOU for watching and helping to get this series to as wide an audience as possible! Kanpai!
I'd have never though there would be so much prep work before anything like alcohol is created. Very interesting!
It's quite something... and this is just Day 2!
Another great vid, Mac! You never fail to impress us with such detailed and interesting content.
I feel like I’ve learned so much about the process already and it’s so much more intricate than I could have imagined - everything performed in unison and in some cases, down to the second! I definitely have a new found appreciation for sake even if I’ve yet to try it.
Really looking forward to part 3!
Thanks so much! I wanted to bring a microscope to the art and science of sake production like had never been seen before. Glad that, as always, you've seen behind the curtain!
@@KanpaiPlanet Really good series Mac. Hope you brought some Koji samples home with you to do some home ferments :)
Thank you for watching! Sadly, Japan is not the place to be homebrewing, but there are plenty of uses for koji-kin!
@@KanpaiPlanet Indeed. I was thinking more of Shio Koji. Many things can be fermented if you have the right starter. Unfortunately Koji (spores) is almost impossible to get here.
We are thinking along the same lines! I recently started getting in Shiokoji and found some good stuff on Amazon Japan.
Another exceptional video Kanpai Planet. Eagerly waiting for Day 4!
Thank you! Not long to wait either. It'll drop in 15 hours! In the meantime please share this series with all your sake-loving friends!
Ha ha looking forward to more washing updates
Stay tuned! More to come as the series unfolds. DAY 3 just dropped!
This is insightful, revealing, and soo funny - well done again, Mac! Love me some bag washing!😆 Can't wait for the day 3 report!
Thanks Pierre. So happy to hear you enjoyed this episode. Day 3 drops at 20:00 JST on 11 March!
Another awesome video from Kanpai Planet. I really enjoyed the opportunity to learn more about sake and Mac is always entertaining. I can’t wait for episode 3!
Not long to wait at all! Day 3 drops in less than 9 hours! Kanpai!
Sake, history, bird watching and a ticket to gun show. Fantastic content as always Mac. Enjoying catching up on this!
DAY 4 just dropped, with a special present for you in the final shot given what you enjoyed in Day 2!
Great and interesting series, looking forward to the next part 👍
Really glad you're enjoying it David!
Great content! Thank you for sharing 🙆🏻♂️
Thank YOU for watching!
Very cool to see the koji making process up close.
It's so important it deserves to have its own show!
Great series, Mac, definitively ! 👍
Thank you, Greg!
Nice episode.
Thanks Gert!
I don't know how I missed this when it came out!
I visited the Gekkeikan sake brewery in Kyoto a couple of years ago, and they showed how it sake was traditionally made, so it's really interesting to see some of the practices which have basically stayed the same, but with a bit of an update in technology!
The production method variations between different breweries are fascinating to see!
interesting and enjoyable again.
Thanks for sharing, Mac.

Thank you! Lots more to come! Kanpai!
The koji inoculated rice sorta look like those Dip and Dots ice cream.
It does indeed!
If the brewing doesn't work out, you'll be great at doing the laundry by hand.
I am glad to see my efforts recognised!
Very technical! How on earth did they get to grips with this process through the ages? At least there’s gold and silver and Toki birds to think about…Copious amounts of water, too.😂
It's really quite incredible how the process was figured out! 🍶🤓
I can tell your really going to miss the bag washing process.
I have to make a follow-up series where I can focus on the bags without the sake making getting in the way!
@@KanpaiPlanet they could probably reuse those bags and recraft them into luxury designer bags. Koji infused designer bags might be a thing of the future.
When I set up my own sake brewery, I'll be doing that!
Which camera and lenses did you use?
iPhone 11 Pro
Using a washing machine is surely in some way unethical or immoral. A modern machine that can handle my pants, surely can deal with a little rice starch as a practical matter.
Thanks for watching and washing!
So meticulous!
It is involved to say the least!
