  • Idli podi is one of the most common and handy condiment in any South Indian Kitchen Pantry. We can make delicious Idli podi at home. The crunchy bite of dal along with balanced spice makes this an absolute delightful. A simple, yet wonderful accompaniment for Idli/dosa/uttapam.

    INGREDIENTS
    1 tsp Mustard Seeds
    25 nos Red Chili
    3/4 cup Whole Urad Dal
    1/4 cup Split Bengal Gram (Channa Dal / Kadalaparuppu)
    ⅓ cup Sesame Seeds
    2 pinch Asafoetida (Asafetida / Hing)
    1 tsp Salt (adjust to your taste)
    3 tsp Cooking Oil
    INSTRUCTIONS
    Heat a pan. Add sesame seeds and fry the sesame seeds in low flame till it starts to sputter. Keep the roasted sesame seeds separately in a bowl.
    Heat 1 tsp oil in pan. Add mustard seeds when the oil is hot. When the mustard seeds starts to sputter, add urad dal.
    Fry the urad dal in medium flame till it becomes light brown. Take this roasted dal aside in a bowl.
    Add another tsp of oil in the pan. When the oil is hot, add the chana dal and fry the dal till it turns light golden brown. Take this aside along with roasted urad dal.
    Now, add 1 tsp oil in the pan and fry the red Chill till the colour of the chilli changes to light brown. Keep the flame in low so that it wont burn the chilli. Keep the fried chillies aside to cool before grinding.
    Allow all the fried ingredients to cool down.
    First take the roasted sesame seeds in a mixer jar. Grind it to smooth powder. Do not grind too long as it releases oil. Grind in regular intervals and make sure they are in powder form. Take this sesame powder aside.
    Next, take the chilies along with salt to the mixer jar and grind it to smooth powder.
    To the chili powder, now, add the roasted dals. grind it to a coarse powder.
    Finally add the ground sesame powder and give a pulse or two.
    Idli Podi is now ready! Allow it to cool for few mins and then store in air-tight container.
    Mix 1-2 tsp of the prepared idli podi along with sesame oil and enjoy with Idli/Dosa!

    I had followed this recipe of yours last year, this year again I'm following your recipe and seen the video again, i thank you for making this video, even though it's a simple recipe, it requires little attention when we make podi first time, since I am not south Indian, so your video is very helpful and your tips are an added bonus to the recipe to remind us the precautions during making podi.     Hi Sowmya, I also used to prepare like this only. But one suggestion, we need not to use oil for frying Dals. Only one spoon oil is enough to fry only Red chili. Bcos if you add too much oil, we could not keep it for long time. Bcos, chikku vasanai varum.
    And then , while grinding, grind the salt and Red chili first and then add Dals to grind coarse powder and lastly add ellu (til), and grind one or two times in pulse mode.
    In this method, we can grind all' in one attempt. Ok 😀

    We can also add roasted curry leaves. It gives a good flavor and we get the nutrient value of curry leaves also. 😇
    My mom uses another technique: she will store the full quantity in an air right jar. She will take a small quantity out of it and grind it with few garlic cloves. My parents like the flavor and also the freshness in the taste. Then when she takes the same powder (from the full quantity originally made) for the second time she will again follow the same process. So every time my parents taste the fresh podi with Nee aroma. Just thought of sharing these two variations. 😇😇

    Very nice and thanks for the tips. My friend's mother adds a table spoon of green gram and rice ... roasted separately and ground along with the dals. This also gives a nice crunch and taste. Using black udad dal also gives a variation in taste.

      But the chillis part, in your video yu seem to be using booth byadegi / Kashmiri chilli and Guntur chilli .. Guntur one is spicy generally. What ratio of these two chilli’s out of 25 have you taken plz ?
