  • How about some really great Beer Brats.
Had a aluminum pan, added about half a stick of butter, then added the onions and bell peppers (sliced up), poured some olive oil on them and then added a little bit of SPG BBQ rub.
Had smoked running at 250-300 degrees, put in the pan of onions and bell peppers, let them go for about 10-15 minutes until they started to soften up. After the were nice and soft added the beer and let it come up to a small boil
Added in the Brats and let them go for about 10 minutes, checked them and nice and white on the first side, then flipped them over and let go for another 10 minutes.
Then pulled them out of the pan and put the brats directly on the grill for about 5 minutes on each side to get a little color on them.
After browning up each side, put them back in the beer, and let them go about another 10-15 minutes.
Let the Brats rest for about 10 minutes then fixed them up and had a great Beer Brat dinner.

Looking good. I warmed up a spiral ham Christmas day on the pit boss grill and it stayed right at temperature between 280 and 300 for the 2 1/2 hours considering it was only 20 degrees outside. Wishing you and family a happy new years.
