While making any bakery related recipes, the measurements are very important. Please follow the same.Sharing this recipe which is finalized after lots of trials . Mumbai ladi Pav
(29 number pav if 60 gms dough for each pav is weighed)
Preparation Time- 15 minutes
Process and cooking Time- 90 minutes
Ingredients-
For activating yeast-
Dry yeast - 25 gms
Sugar- 15 gms
For Dough
Refined flour (bakery flour)- 1 kg
Refined oil- 50 gms (including for brushing after baking)
Salt-20 gms
Water- 600 ml
Additional refined flour- 50 gms
Bread improver- 3 gms (optional)
Milk- 20 ml (for milk wash)

Thank you for sharing this recipe. Tried today with unbleached all purpose flour @450°F for 18 min. Bread still remained raw within. It was quite chewy. Was expecting soft and light bread!
Thank you for the feedback. Which oven you are using? This is the recipe which we are using to make pav everyday at our outlets. Hope steps are followed as shown.
250 degrees C is not 450 F, it's 482 F.. so more like 500 F
Very detailed instructions and Pav that actually looks like Mumbai Pav. A lot of Pav recipes make Pav that looks much thicker like bun. Thanks for the wonderful recipe!!

Hi prashant ji, thank you for your comment and precise observation. I have to do that magic as my oven is double decker. So I shifted it below aft 9 to 10 minutes for evenly baking. While doing in regular oven no need of shifting ( as it is single deck) The recipe is tested and can be done in regular oven if steps are followed correctly. I am happy to know you liked the magic part .🙏

I have eaten that todi fermented bread in Goa. It used to come in 2/3 forms. That used to smell awesome and test yummy.

Nobody wud have told you so I am telling... Yeast too has different taste when you buy from market. Hence the bread in mumbai tastes different from one made in hyderabad , Delhi, Banglore, Chennai Bakery.
Yes ,that could be one of the factors apart from difference of water, maida, used in recipe and age old technique of baking pav by Mumbai pav valas. Good observation 👍
This is not such a difficult recipe yet most bread makers in India especially North India can't get it right.

I tried making Laadi Pav and got very good results. I was craving to eat Mumbai style Laadi Pav since last 15 plus years. It's not possible to get same taste of pav/bread here in USA. Tried your recipe and it was awesome. The result was fantastic. Just a small request, had very hard time with measurement of ingredients in weight. Since most of us don't have weighing machine at home it will be very helpful to provide measurements in teaspoons, tablespoons, and cups. But eventually awesome recipe.

Thank you so much for your feedback .It definitely encourage me to make the recipes more and more audience friendly in terms of measurements etc.I am happy to know your ladi pav turned out good thousands of miles away with this recipe. For bakery products especially we use exact weights in most of the places here in India. yes will try to include spoon and cup measurements as well in upcoming videos. 😊😊
Manish for baking recipes always weights are used to be more precise. As they say cooking is an art but baking is a science.

Apne pav ki tray first raw me dala pak gye to niche ki raw me they apne kaha nahi kitni minute ke bad tray change karneka sab achi tarh sikhane ka nice recipe
mine is a double deck oven. after 7 minutes i shifted tray below.( for even baking ) i forgot to mention this in video. but in single deck oven. no need to do anything.

@@DevsKitchen A few queries.
1. I have a Zojirushi Bread Maker, how can I make this dough in it? The water quantity is tricky to judge when making a customised bread in the machine. I tried it a couple of times, but the dough would either become very loose or very sticky after the machine would knead it for 15-20 mins. So please advise, the machine needs and proves very well, so I would like to use it.
2. When I used the breadmaker in US, using the flours available there, it gave perfect result with the recipes that were provided with the machine but when I got it here, the same recipe with our flours doesn't work at all. I've to be very watchful. Most of the times, I have to ready the dough and then put it in for kneading & proving. That's not fun. So please guide with fine tuning it so that I get the same result here.
3. Please share a link for the products used or local addresses from where these can be purchased, eg. bakery maida, yeast, non-commercial weighing scale (v. imp.) and the baking trays (size). I'm from Mumbai.

Maida in india is mostly a weak flour. Pls add 12 Gms gluten per kg and if possible 4 gms of bread improver. This will give you good finish
