Weber Q: Baby Back Ribs

  • I would normally grill baby back ribs on a charcoal grill with wood chunks. This is my first attempt at grilling baby backs on a Weber Q1200.
    Directions:
    Remove membrane from rack of baby back ribs
    Season both sides with rub
    Place roasting rack on roasting shield
    Cut rack in half and place on roasting rack
    Preheat Weber Q for 10 minutes on High.
    Reduce heat to Low and add ribs and a smoke pouch containing hickory chips
    Close grill and cook on Low Heat for 1 hour and 45 minutes basting with mop sauce every 30 minutes or so
    At 1:45 brush on barbecue sauce, close lid and grill for final 15 minutes.
    Ribs are done at 2 hours.
    **In video I went over 2 hours, but 1.5 to 2 hours is plenty depending on how hot your grill runs on low
    Rest for 10 minutes
    Cut between ribs and serve
    ________________________________________
    Basic Barbecue Rub:
    ¾ Cup Dark Brown Sugar:
    1 Tablespoon Garlic Powder
    1 Tablespoon Chili Powder
    1 Tablespoon Allspice
    1 Tablespoon Cumin
    1 Tablespoon Paprika
    2 Tablespoons Coarse Salt
    1 Tablespoon Fresh Ground Black Pepper
    Mix together with a fork
    Barbecue Sauce:
    20 oz. Bottle of Ketchup
    ¼ Cup Apple Cider Vinegar
    1 Tablespoon Honey
    1 Tablespoon Dijon Mustard
    1 Teaspoon Tabasco Sauce
    1 Teaspoon Liquid Smoke (Optional)
    1 Nipper-sized bottle of Whiskey or Bourbon (Optional)
    ¼ Cup of Rub
    Simmer for 10 minutes
    Mopping sauce:
    1 Tablespoon of rub
    1/4 cup apple cider
    1 Tablespoon red wine vinegar
    Stir together
    Enjoy!

    I’ve done BB Ribes for 40 years on a conventional gas grill. I’ve smoked them on my Meadow Creek offset. Just bought a Q1200 for my camper and can’t wait to give this method a try! I love these CZcams videos you produce. BTW I’m across the continent near Lake Tahoe.

    I have learnt to cook low and slow on my baby q. It is a game changer. I can my baby q to sit consistently at 120 degrees Celsius, 250 degrees Fahrenheit. Perfect smoking temperature i think. You just have to act like you are turning the knob off. Go really slowly between start/hi and the off setting while watching the flame. Check the flame size on low and just set it at a lower flame size. Hope this helps. Great videos man.

    That looks amazing; I'm literally salivating watching that. As I go I steadily improve and perfect different recipes on the Q, and I write notes on my phone for each recipe. I can do steak, roast chicken, beer bratwursts, corn, peppers, asparagus, mushrooms, eggplant, and your cajun shrimp. Most of these recipes I would be happy to have guests over to cook for. What an amazing, efficient grill. Many of the recipes or inspiration are yours. Thank you.

    Hab heute auch meine ersten "Rippchen" auf dem Weber Q1200 gemacht.Ich habe sie gewürzt mit Magic Dust, Thymian, Rosmarin. Danach 2 Tage zum "ziehen" in den Kühlschrank. Bei 140 C jede Seite für eine 3/4 Std. gegrillt..... mit BBQ Sauce bepinselt. Ergebnis........ Safig, mürbe, zarte leckere Rippchen(3Kämme)😂.Absolut klasse. 🎉Danke, deine Videos sind SPITZE. Schöne Grüße aus Thüringen /Ilmenau /Deutschland.

      Great to hear. Since this grill runs pretty hot, even on low, I'd probably sauce the ribs around the 1:30 hour mark, and pull them at 1:45. Or wrap them in tin foil at the 1:00 hour mark and give them another hour wrapped. Good luck!

    Made these today and they turned out amazing! Been keen to try some low and slow type things on my q2200. Will try a brisket soon using the hot and fast method which would suit the Weber q temperature range.

      Glad you liked these. I don't do too many longer cooks on the Q now that I have a kettle. But I cook burgers, dogs and steaks and salmon filets on the Q all the time.

      They came out very well, all things considered. Problem with this grill for ribs is you can't really get it below 350 degrees F. Check out my Memphis ribs video where I wrap the ribs in foil half way through cooking if you want ribs that are more fall-off-the-bone. Thanks for watching, Brad!

    What a fine CZcams video! I just purchased a Q1200 and didn't really think I could use this grill to do ribs! Your explanations are clear - great voice, excellent video description -- plus I also learned how to grill corn-on-the-cob on the grill! I've been a charcoal only Weber grill kinda guy for the past 33 years but now looking to do both. One concern is how much propane I'll use in 2 hours -- I'm using the small 1 lb gas bottles (not the large ones) -- and they are expensive here in Belgium where I live… OK I'll give it a try (now to find good ribs in Belgium!)-- Thanks again and I've subscribed!!

      Thank you sir! Always nice to hear kind words. I ran a test and the 1lb-Coleman tanks run between 3.5 and 4 hours depending on how high you're running the grill. That said, I'd always keep a spare tank handy. Thanks for watching in Belgium. Cheers!

      I'm glad it worked out for you. I'll be making some more ribs for sure. Haven't tried brisket. I may just leave that to the smoker grills out there.

    So I tried a variation on this with beef short ribs, using some insight gleaned from some other videos. I took about 5 hours all up, first couple hours I didn't bother with the mopping sauce, but applied it every 30 minutes after that. I used one of those meshed tube smokers, that you fill with wood pellets and chips and gradually burns through from one end to the other like a cigarette. I learned to take it out and put it in the sink when opening the lid otherwise the smoke catches fire.
    It tasted great from my perspective (both the rub and the BBQ sauce), personally, but I like hot and spicy things. Next time I will halve the amount of chili and tabasco. I think I'll also use a "3-2-1" method or something similar, i.e. wrapping the ribs in foil halfway through as that is what the wife expects ribs to have a texture like. But overall delicious.
    I've got the Q3600 NG (i.e. the Weber Family Q), and with just a sheet of Al foil underneath the trivet, I was able to keep the temp at 225-250 F with just the small center burner on about halfway. I didn't use any water reservoir. You kind of have to be attuned to the temperature on the day as depending on conditions you have to adjust the burner setting a little to get it right, although about 50% or a very little less is where it's at.
    Also, beware of gristly/fatty bits - I did my best to cut the fat out of it to begin with as I usually do, but my wife was complaining about her piece, and then I thought to get her another rib bit which was much better.
    Overall, one kid likes it more than steak and another prefers steak. I think I have steak about perfected now - olive oil and rub on 1 inch steak exactly, get it to 500-600F or so, some hickory, mesquite or a combo of each, 2:10 on each side, perfect medium.

      I haven't tried the family Q personally, but the two burners seems like it would be perfect for a long cook. I make short ribs all the time in the oven, but I haven't yet tried them on the grill. Definitely something I will be looking forward to grilling next year. Cheers and thanks for the idea.       I haven't because a beer can chicken sits pretty high up off the grates I don't think there's enough room to close the lid. I was considering trying it with an 8-oz can of beer and a small chicken. Beer can game hen? Would love to hear how it works out for you.

    Great video! When you say a “low heat”, is this the normal roasting setting on the Q, which on my family model 3200 is the middle burner off and outside burner on full, or something different than this? Thanks from New Zealand!!

      I've never used a 3200, so I don't know how that grill works. The Q1200 only has one burner, and I simply mean with the gas knob turned to low. Sorry I can't be more helpful. Thanks for watching in New Zealand.

      I have the 3200. You can get the temp really low by turning off the outside burner and just using the small middle burner. If things get too hot you can put a tray of cold water in which will soak up some of the heat. Or you can make a ball out of aluminium foil to prop the lid up. Experiment with a few things. The temps on this video are actually quite high for a slow and low rib cook.

      I agree. This cook was too hot. My Q can't seem to get below 350º F (176º C). I have not tried propping the lid. That's a good idea. Also, you might want to try wrapping the ribs in foil halfway through cooking like in my Memphis-style ribs video.

      I have the Family Q 3200 in Australia. Once I’ve preheated the grill, I turn off the middle burner and turn down the outside burner to medium. Seems to work.

    Definitely worth a try for a picnic or a trip to the beach using a portable gas cylinder.

      Some people love just the dry rub without any sauce. For me though, I like the Kansas City style with the sauce. Both are great though

    Great vid thx. Where can I find out more about using the hickory chips in the foil? How Long do you soak the chips for first before wrapping and do you leave a bit of foil open for smoke to escape? Ribs are ready just need advice on this now thx man.

      I don't soak the chips before I put them in the foil. Put the chips into the packet and put one or more holes in it. Preheat the grill with the packet on the grill while the grill is on high. This will get the wood chips smoking. Reduce the heat to low to cook your ribs. Best to keep the chips pouch right above where the heat comes into the grill as that's the hot spot, at least on my grill, and will keep those chips smoking. Good luck!

    Great channel! I am also looking at the Q1200 to take camping. I was debating between the Weber and the Coleman Roadtrip LXE. I am also a big Seiko Dive watch fan, so I think it's a sign the Q1200 it is! Thanks again. Looking forward to more great episodes. BTW - how has the grill been holding up for you since you've had it?

      Can't go wrong with the Q1200. I was at a Giants football tailgate recently and a lot of people were using the Coleman. I've never tried one, but I think it's pretty good too. What I like better about the Q is the taller lid gives you more space and allows for roasting.

      Yes, that is what I am thinking as well. The coleman doesn't allow roasting. The other reason I am leaning on the Q1200 is that it looks very easy to clean. Your cleaning video was very helpful. The Coleman has a lot of parts within the grill area that would make cleaning much more difficult.

    I hope you’re still active. Have you tried using the electric version of a Weber Q? Q1400 or Q2400? Would these recipes work on the electric or do I need gas to make it work? ESP, what about the wood chip aspect? Is there a hack to make that work on an electric?

      Not sure about the electric Q, I've not tried it. But when cooking on a kitchen stove, I would always choose gas over electric. If you already own the electric, there's only one way to find out.

      Thanks Jason. The Q is perfect for balconies. The pan is called a Weber Small Roasting Shield (6561) and it appears Weber has recently discontinued it. The rack is a Weber Small Roasting rack (6563) and it may have been discontinued as well, but I think you can still find the rack.
      Instead of the shield, you can use a double layer of tin foil with some small slits cut into it. Could be an idea for a new video. Thank you, sir!

    Thank you CEG! I've tried ribs on my weber q 1200. 2 h 15 m cook time at low heat. I used roasting rack. They came out perfect. My question is: can I use the same method, temperature and cook time for pork belly? Two pieces, half a kilo each?

      @@GallaghersGrub I did some research. First time i cooked a skinless (bought by mistake) pork belly 90 minutes on medium heat, using weber roasting rack. Second time with skin. I scored the skin, covered it with salt and left in the fridge overnight. Before cooking I removed the salt, leaving only the salt in crevices, put some olive oil and season it with salt. Then on the Q with the rack, 30 minutes high heat, then additional 60 on medium.

      You can get a little bit of smoke flavor from the smoke pouch, but not as much as a charcoal grill.

    Great video... I tried your technique but I think 325 is too high of a temp. Came out dry. Next time I'm going to see if I can bring the temp lower by cracking the lid.

      I agree, this grill doesn't really get low enough. I would try grilling on low for one hour, then wrapping in foil and grilling for another hour. Let me know how they come out by cracking the lid. I have not tried that.

    I wonder if I can add another regulator between the bottle and the grill to get the temps down to 225 or 250.
    That would seal the deal on me buying this thing. I need a winter grill that I can run outside my kitchen window.
    The kettle gets all the attention during the other three seasons.

      I'm not sure the flame will stay lit at those temps. I have seen some people propping the lid open a little to get lower temps, but I haven't tried a longer cook than 2 hours.

      Another guy here recommended setting the burner dial between off and light and it would produce a low flame. On my boat I had issues with the stove and bought one of these to raise the pressure, but is seems to be able to lower it also.       The pan from Weber does have holes in it. The holes are to help the grease drip down into the grill. I don't have any Weber pans left and they don't sell them in the US anymore so I use a double layer of tin foil the same size as the pan. I put a few slits in it with a knife for the grease.

    do you think the the Q2200 would be able to achieve a lower heat than the Q1200? I’m having a hard time choosing between the two :/ the 1200 seems perfect but I would like to set myself to be able to experiment the best way possible. Any tips or recommendations?

      Lower heat on the 2200 is doubtful. It can likely reach higher heat because it has more BTUs. 12,000 compared to 8,500. I've never tried the Q2200. It's a bit bigger so would be better if you're cooking for 3-4 people regularly. With the 1200 you get all the great colors to choose from, and it's perfect if you're mostly just cooking for 1-2 people.

      @@perricassie8450 The Q is not really for smoking meats, but neither is any gas grill.
      What the Q really excels at is everything else.
      Since it's mostly just the two of you, I'd probably go with the 1200 and get it in the color you prefer. Just a fun little grill.

      Should be the same time depending on how low your Q gets. I'd smoke them for an hour then wrap them in foil and put them back on the roasting rack for another hour. Unwrap, sauce and roast for another 10 minutes. Good luck, man.

      The small 1-lb camping tanks only seem to last about one or two long cooks. Even if you're just cooking steaks every night, the small tanks only last about a week. The 20-lb tanks seem to last forever with this grill. I'd highly recommend using the 20-lb tank.

      Ribs are pretty tough. They need a long cook at a low temp to become tender. If they were cooked directly over the flames, they'd be done in just a few minutes, but wouldn't be nearly as tender as I like them.

      the porcelain enamel grates on the weber q's are not very "smoker friendly" because they get super hot - which is why they're great for burgers/steaks. there's also only one burner, so placing meat directly on the grill for slow cooking would most likely burn it even at the lowest setting (i know from experience lol) the roasting rack helps by elevating the meat from those grates, and the foil shield underneath is used as a method to cook by indirect heat... which is a great alternative for smoking and roasting using our grills - im actually going to try a small brisket flat tomorrow :)

    Seem funny your temp is holding at about 320, on my Q-Grill on low it shows 258 which for ribs is about right, 250 is what most pro will cook at so I might need to add some time.

      @@HuntShootOffroad I'd try again. First hour unwrapped on low heat. Then take off grill, wrap in tin foil with butter and rub. Back on grill for another hour. Remove from foil. Place back on grill, sauce and cook for 15 more minutes. The wrap will make them more tender.

      You can use these trays multiple times, yes. Unfortunately though, Weber no longer has them available in the U.S. market. They are still available in some other countries though, like Australia and the UK.
