These videos are so HELPFUL! I onced followed the mash potato recipe you made and its the best mash potatoes I've eaten!!
I give you an advice beacause it's our cook speciality, but take old potatoes, that are not really hydrated, but more dry. So you can with this add less starch and they will have more the taste of potatoes!
pro tip: if you dont have a ricer like they do you can easily use the fine side of your cheese greater, it works just fine but you might wanna peel the potatoes and not scoop them out so you have something to grate ;)

Loved your recipe...I tried it out yesterday and they turned out fluffy and kept their shape throughout. However, I skipped the egg yolk and they still had great consistency.

The first time I tried gnocchi was when I visited Australia. I feel like my country doesn't have much knowledge on pasta variations and just focus on the common ones such as spaghetti and elbow macaroni. The sauce of the gnocchi was a 3 or 4 cheese sauce topped with basil and shredded parmesan. The first few bites of the gnocchi were the best, however the more I eat, the more I kind of get sick of it. Sadly, my first experience eating gnocchi wasn't that great, it was definitely the sauce that caught me off. But I'm willing to give gnocchi another chance

If you are using a fork to make ridges, use the BACK of the fork. Rest the fork upside down on the bench and run the gnocchi over the top. It won't tear the gnocchi.
