This week we're foraging sweet woodruff and using it to flavor homemade "vanilla" extract and "vanilla" ice cream!
Listen to more of Ethan's original music here: / lennoxec
Here in germany we actually don´t eat a lot of woodruff. It´s mostly in sirup form, as jello or as a effervescent powder like ,, Ahoi Brause´´. It´s like coolaid. One of those things that some like and others really dislike. Like licorice in scandinavia i guess but really not that common. I think it´s nice. It´s one of those old flavors that have lost their popularity in modern times. In german it is called ,,Waldmeister´´. That means literally ,,Master of the Woods´´. I think that´s pretty cool.
I remember that about 10-15 years ago it regot it's popularity and each ice cream vendor in Germany sold Waldmeister icecream. I was so hyped about it, but I can't actually remember the taste xD
I am german and you just blew my mind. I feel supid now. I honestly didn't know Waldmeister is an actual plant, I thought it is something like blue curacao, something that just made its way via sirup and now is used everywhere for its green color and strong taste. The whole time I was like 'no that's not a thing in germany, I never heard of that, what are you talking about' -.-
German boyfriend? *suspicious* lol
I have been watching these videos for such a long time and heard Silvan talk about sweet woodruff and using it as vanilla, and I always thought, i don't know that plant, sad we don't have that here in Germany.
DAS IST WALDMEISTER?? 😱😂
In Germany we even have woodruff flavored pre workout drinks in the gym 😂
If I could only use one word to describe your videos it would be peaceful.I admit I try to get off somewhere away from the rest of the family so I won't be interrupted to watch lol. Glad to see Jordan continuing to get well and look forward to the next video.
So glad the videos are bringing you peace! And thank you, I'm feeling a little better every day
Thank you for sharing this video about Sweet Woodruff. It's also great seeing Jordan feeling a bit better. 😊
It's so interesting to me as a German to see woodruff being compared to vanilla in flavour because for me it's a very distinct and more fruity aroma than vanilla :) to me it kinda smells like if bright green was a flavour and I personally associate it with very strongly/ artificially flavoured foods like jello, ice cream, gummy bears etc (but I still like it, it's kind of nostalgic)
Sounds delish!!! Jordan looks great. Continued prayers
Thank you!
The chill break is so soothing
This so cool!! I'm intrigued by the idea of a local vanilla alternative. Jordan is looking great!!!
Perfect music to go with this video.
Thank you for so much beautiful inspiration. I’m foraging in Denmark, and part of a food waste program, so I get all my fruit and veggies for free. Always looking for new ways to find free food😊
How lovely to use a backyard herb as a flavoring. You have me curious to try it . Your ice cream looked wonderful. I have used lavender in ice cream with success but only used a few sprigs.
Your videos are a welcome treat any day of the week.
Happiness to you.
ooh, I wanna try those dried leaves in tea!
I never would have thought to use herbs in ice cream thanks for the idea! I just made batch #2 of mint chocolate chip ice cream by steeping a few handfuls of the abundant mint in my garden in the milk/cream/sugar instead of an extract. So yummy!
What a beautiful plant!
(Also, love the feisty squirrel chirping in your yard. My late mother would always say, “my day is never complete until I get chewed out by a rodent or hummingbirds!” 😂)
Haha I love that 😊
Can always know that just in a few minutes of watching, I am going to enjoy this😊. Always something new to forage and identify in our environment. And always create something tasty and new to share with us. Wishing you all the best for all future endeavors.❤
@@juneranfone3238 Aw, so glad you're enjoying the videos. Thank you for the kind words!
Wow! I'm always amazed at all nature gives us. Thank you for showing us all that we are missing.
I love the idea of growing flavorings as well. I just planted a coyple of spice bushes yesterday. Can't wait to see how the 2 different varieties of woodruff compare!
Much easier to hear you this time - thanks for adjusting the music.
Great video as always. I've been spotting some of the plants you've told us about here in the UK too!
Brilliant, it’s really amazing how you get that flavor from a simple plant. Never knew.
So peaceful to watch and listen to. Thanks you guys for sharing your foraging knowledge!
Wow that looks amazing! Simple and meaningful
This sounds amazing, thank you for this video!!!!!
You're welcome!
Welcome back, Jordan's eye! I can't wait to find some sweet Woodruff myself!
The ice cream looks good, but who doesn't like ice cream. Glad to see that Jordan is doing well.
This is the best video ive seen all year. I look forward to a future of growinh
Aw thanks! Glad you enjoyed it :)
Love watching!
I am from germany and sadly have never come across woodruff ice cream. Now I'll be sure to make some!
is that a river or a creek in the final shot? I grew up in the Pittsburgh area but haven't been back in a very long time. I miss all of the water! Jordan is looking like he's feeling much better! I just ordered some sweet woodruff seeds. hopefully I'll have some to work with later!
Thank you, I’m feeling pretty good today! And that’s a little creek out near Ohiopyle 🙂
When I make extract from vanilla beans using everclear, I've been taught to dilute the everclear 1:1 with distilled water 30 minutes ahead of pouring it over the beans for a better extract. Not sure is this would be true for herbal extracts too but it's something to look into!
Hope the recovery has been going well, do keep prevailing
Thank you!
Love this video! Totally want to try this. Have you ever made bitters? Woodruff might be a good addition
yum
Nice❤
I don’t think we have that around us, at 7800ft elevation in the Rocky Mountains. I’ll look around though!
I noticed your drying tray when you were drying the sweet woodruff. Do you use a dehydrator?
❤
Do you find that it spreads quickly or keeps to itself?
Off topic from the amazing looking ice cream, but I LOVE your jumpsuit at the end of the video! Where did you get it?
Thank you! Jordan got it for me last year from our former neighbor who makes custom linen clothes. She actually has a channel on here and I think she ships: @charliedarwintextiles
Where would one look to purchase seeds for sweet woodruff? Sounds amazing.
Just buy a small 9cm pot from an organic nursery; it will grow like mad in no time! Make sure not to let it out of the garden...
**Old man noises** 😂
I found myself making such noises right around the time I turned 25
You mentioned they cleavers are not nearly as sweet; have you tried them as a vanilla substitute as well? How would you use cleavers if at all?
😊
If it contains much toumarin, doesn’t it taste more like cinnamon than vanilla?
Would vodka work as well as Everclear, or is the alcohol content not high enough?
Yea, vodka works great for extracts like this 🙂
@@HomegrownHandgatheredGreat, thanks! 🙂
It grows well. It is a weed and you must have a really good nose. I can barely smell it.
It smells a LOT stronger once it’s dried out. It’s really strange actually
Why is everything in slow motion?
