A very hot autumn for Scotland eh! Although it seems to be cooling down now thankfully. I’m ready for jumper weather! Definitely a lot cooler than Italy though I’m sure! ❤🏴
So I change it up now and again, but usually: 1) Peel and cut to desired size so that they're all even. 2) Parboil in salted water for 6-8 minutes, depending on size. 3) Drain and toss them around a bit to fluff up the edges, leaving them to cool a bit. 4) Preheat a big tray with a few tablespoons of oil in the oven at 200C for 10-15 minutes. 5) Carefully toss them in the hot oil to coat, add rosemary and salt. 6) Return the tray to the oven with the potatoes for 30-40 minutes or until nice and crispy. No tossing/turning required until then!
