This cherry cake was a staple at my grandmother's table, as it was in many of our neighbors' homes. In my husband's family, they called it "fall-apart cake."
It’s an inexpensive, quick, and hearty cake whose aroma will transport you back to your childhood. Not only is it easy to make, but you don't need to be a professional to prepare it. Just a little enthusiasm and the right ingredients are all you need.
Recipe (for a baking dish measuring 38x22 cm / 15x8.7 inches):
Dough:
4 eggs
1 1/2 cups (300 g) sugar
2/3 cup (150 ml) oil
1 1/4 cups (300 ml) yogurt (or milk)
2 packets of vanilla sugar (about 2 tablespoons)
1 packet of baking powder (about 1 tablespoon)
3 1/3 cups (400 g) flour
Filling:
2 to 3 1/2 cups (300 g - 500 g) cherries
2 tablespoons semolina
For dusting:
A little powdered sugar
Prepare the batter and bake for a few minutes (3 - 5 minutes). Add the cherries and bake at 200°C (390°F) for about 30 minutes. Dust with powdered sugar.
