    You did a fantastic job explaining how to use this. Even the Spyderco video was not this simplified. I just got the best edge I’ve gotten in over a year since I’ve had this following your video.
    For those of you who have not purchased this device, I highly recommend it. It really does take the guesswork out of getting an extremely sharp edge.
    Thanks for the great video.

    Actually just had this kit delivered today. I watched another video from Spyderco from 7 years ago the other day and decided to try it out. It really does work as well as this video shows! I usually sharpen my knives on diamond plates and waterstones so I know what sharp is. This thing is dead easy to use and produces a razor sharp edge super easy and fast. I can still do a better edge on my 10,000 grit waterstone and a strop, but that requires much much more skill. This has found a permanent place in my kitchen. Highly recommended if you just want razor sharp knives and don't want to put in many many hours of learning freehand sharpening.

  • @David_Downs
    @David_Downs Před 3 lety +33

    3:19 I would note NOT to let the knife slide all the way off of the stone, you wanna stop at the tip and not let it slide right off... as sliding off with essentially wound off your tip, you can fine adjust that part of the knife when you flip it over to the smooth side more.
    Important to note for people looking into the system to not let the knife roll off of the stone when you are doing your sharpening.

    • @landnavigator2
      @landnavigator2 Před rokem +1

      I suggest that, if your knife has a "belly"on the blade, you rotate the handle of the knife upward as the belly part of the blade passes down over the end of the sharpening stroke. At the curved "belly" part of the knife you don't want to continue to hold the knife level or parallel to the tabletop as you finish the sharpening stroke. Please don't misunderstand, you still want to hold the knife vertical or straight up as you make your sharpening passes ( the blade being perpendicular to the tabletop). I use a light source directed to the rear of the stones so I can easily see the contact area between the knife edge and the stones.

    Excellent demonstration. Thank you. I’ve been using one of these for over 12 years, but I thought I look at best practices again to make sure I am doing it right. I have 25 kitchen knives which I sharpen often, but as I get older I get a very sore neck and back when it do it. Your video reminded me that I do not need to put so much pressure. Also highlighted that some of the Japanese knives can be done at different degrees. The trick with the pen is fab. Also reminded me of the so many features I do not use. Like the reason why the stones have a ledge in them. I was not aware of its uses. Muchas gracias from a corner of England

    I was super skeptical about this thing, but I also suck at hand sharpening. Took the plunge and the first knife I tested on it was an old Kershaw Crown that I've had for about 10 years (and which was sitting dull in a desk drawer for about the last 3-4)...and this thing put a razor sharp edge on it in minutes. I am a believer.

    I would add that when you first start using this on a knife that you may not get edge being touched by the stones -- you will have sharpie left at the edge. In that case you need to get the course diamond supplements and grind at 30 degrees until you've removed enough metal away from the edge for the 40 degree medium stones to work all the way to the edge.

      I have it and I can get mine shape enough to shave the hair off your arm but I can’t get it as good as spyderco’s factory edge. I’ll add that I absolutely suck at knife sharpening and even I can get a decent edge. What I don’t like is the stones aren’t aggressive enough so I fell it s’more fore maintaining the edge with a routine sharpening. I wait till it’s full as hell and don’t want to cut and chipped then try to sharpen and this kit just isn’t enough. They do offer optional stones that will be better suited for what I’d like to do. The way I do it it takes a long time and more strokes than what’s claimed.

Figured I'd check a few sharpening system reviews, and started with what I already have. This vid explained I've been using the system incorrectly the entire time I've owned it lol - I was using the flat side first, based on an instructional video I'd watched when I first received it. Gonna try it out with a few knives the correct way, and hopefully quell the itch to get a whole new system. Regardless of what I end up doing, this was a pretty informative and well-done vid. Thanks for this tutorial. I have a Wusthof chef's knife. I afraid I let it get pretty dull. I bought a Spyderco and followed the instructions on the tutorial. I started w/ a 30 degree angle because those are the specs Wusthof provided. I've now moved to a 40 degree angle to see if that works. But the knife is still dull -- I haven't moved passed the medium stone and am still unable to cut paper, despite having already done 150-200 strokes. Would appreciate any advice. Thank you!

      @grovesy333 Před 2 lety

      You’ve got a super dull edge with a wide profile you need to reprofile it at 20 degrees per side on a diamond then move to medium then fine should be razor sharp after all that

    • @David_T
      @David_T Před 2 lety

      I also have a Wusthof chef's knife. several things:
      Go out and buy the diamond hone, it will definitely help.
      The stones are not long enough to do the knife in one stroke. Go from the back of the blade to the centre, and then the center to the end. You may find that you need to do the tip as well.
      Expect to do a hundred or more strokes.
      Don't move on from using the narrow edge of the brown stone to the flat until you can pop hairs off your arm. The flat part of the brown stone or the white stones won't make a dull blade sharp. They are used to make a sharp blade even sharper.

    I bought one from Amazon 2 months ago and it broke on literally the very first stroke. I tried to sharpen the scissors I used to open the package with and the little bit of pressure I put on the rod was enough to separate the top part of the plastic base from the bottom part. Also, one of my white rods had two manufacturing defects, bumps in the surface that destroy the knifes edge.

      @@knifecenter thanks for your reply, DCA. from what i read about their warranty (maybe I'm wrong), I would have to spend my own money to send the defective product to them for inspection, wait a long time, and (I think) pay for them to ship the thing back to me. I had a hard time justifying spending $88 on the unit to begin with and couldn't imagine spending even more on it as some sort of penalty for receiving a defective unit. I think it would cost me less to just epoxy the broken plastic and order a replacement white rod.

      @ciro3807 it was probably a fake one. I wouldn't ever buy a brand name knife or sharpener off Amazon. Ebay too unless it's a legit retailer.

    Does the medium and fine rod work well on the CPM Spy27 metal?

    I love sharpening with my stones and was looking at mixing it up by getting something like this. But it just really doesn't look like fun to me.

    For some weird reason I can't get a good sharp edge with this sharpener.. :( Is it S30V steel too hard and needs more time ?

      Hard to say without having a look, but it is possible your blade edge might need a little reprofiling, in which case the CBN or even more aggressive diamond rods might be needed: kcoti.com/3h4Ldjt

    Which stone is better if you want something that will be more course? Not familiar with those. I tend to wait till the knife is getting dull and by that time I don’t feel this kit will sharpen fast enough so I definitely need something more aggressive. It seem to take way more passes than what they claim. I’m sure their claims are fine for the routine maintenance with less time in between.

      The brown stones do a decent job even on a dull knife, but if the edge is really far gone I would start with a set of the diamond stones that fit this unit: kcoti.com/3h4Ldjt

    Looking at buying this tool for my new Spyderco Caribbean, Benchmade Triage and even my Wusthof kticken knives. Will all the angles be the same at 40 degrees? Don't really want to use a marker on my $600 kitchen knives. Awesome video

    • @TheLochs

      with the 40 degree angle they will all be 40 degrees. The 30 degrees will be all 30 degrees. But, you can do an initial 40 degree and a 30 degree back bevel after. This is great for sharpness and the longevity of the knife. its up to your preference. Also, sharpie wipes off with acetone. just apply a bit and wipe it with a soft cloth. I'd wash it after if its for food prep. Also, I dont want to sound like a dick, but $600 for a kitchen knife is extravagent. If thats what you want then thats totally cool. However, a $100 kitchen knife is all you need. A decent steel doesn't cost much. The rest is fluff and buff (ie, expensive handle materials, etc.). Happy sharpening. Oh, and a lot of Japanese kitchen knives have 30 degree all inclusive bevels fyi. German/European kitchen knives are generally 40 degrees. Generally that is.
