- I made these tasty treats a little while ago. They include all the flavours of a Tiramisu inside a cupcake. The cake itself is a coffee madeleine sponge so light and beautifully textured. Filled with a gorgeous chocolate sauce and topped with mascarpone cream frosting laced with amaretto liquor and finished with chocolate covered coffee beans and grated chocolate…

Ingredients
Choc Sauce:
200g dark Bournville chocolate
40g caster sugar
130ml Milk
75ml Double Cream
35g Cubed butter
Madeleine Cupcakes:
4 eggs
200g caster sugar
200g plain flour
1 tsp baking powder
4 tbsp strong coffee
200g melted butter
Mascarpone Cream:
480g double cream
2 tbsp cornflour
70g icing sugar
3 tbsp amaretto liquor
230g softened mascarpone
Decorating ideas
grated chocolate, chocolate covered coffee beans, amaretto filled cupcake pipettes
Method
For the Chocolate Sauce
1) Melt 200g dark Bournville chocolate gently in the microwave stirring occasionally
2) In a saucepan add 40g caster sugar, 130g milk and 75ml double cream. Heat stirring continuously until bubbles begin to appear
3) Pour this over the melted chocolate and stir well.
4) Return to the heat and continue stirring for 1 minute
5) Whisk in 35g butter cubes and beat until smooth and glossy then set aside until needed
For the Mascarpone Cream
1) In a medium bowl, add 480g double cream, 70g icing sugar, and 1 tbsp cornflour then whip until stiff
2) Gently whip in 4 tbsp amaretto liquor and 230g softened mascarpone until incorporated. Pop this into a piping bag and leave in the fridge until needed
For the Madeline Cupcakes
1) Preheat oven Gas 6/ 200’C or 400’F
2) Pop cupcake cases into a muffin tray
3) In a large mixing bowl, whisk 4 eggs and 200g caster sugar until light and fluffy
4) Add 4 tbsp strong coffee and 200g melted butter, stir lightly
5) Sift in the 200g flour and 1 tsp baking powder and fold gently until just mixed
6) Spoon into the cupcake holders and bake for 15- 18 mins until beautifully golden brown and the tops spring back. Leave to cool
To Assemble
1) Using a large piping tip, make a hole in the top of each cupcake, just half way down, to make a cavity
2) Pipe in the chocolate sauce
3) Pipe the mascarpone cream on top of each one and decorate with grated dark chocolate and/or chocolate coated coffee beans. Add an amaretto filled cupcake pipette to squeeze into the cake before eating
