It’s all about the size of the hole at the bottom of the pastry bag! Small holes create small, shoestring sized pieces that don’t expand, but instead become dense & greasy, whereas a large hole of course creates bigger pieces that expand & get fluffy & pillowy! Nothing better than a fresh, hot & pillowy funnel cake with a light dusting of powdered sugar! (chef’s kiss) 💋

Just want to say thank you for this. As a non-American, I've spent decades thinking funnel cake was actually a slice of something like sponge cake. I always envisaged Americans wandering around state fairs munching happily on a slab of oddly-shaped cake that was baked in a funnel mold.
I've had an American internet friend for more than 20 years - and for more than 20 years he's been making (bad) jokes about his wife's addiction to funnel cake. And for more than 20 years I've been thinking (but not saying): "Oh give the woman a break. There's nothing wrong with a slice of cake and a cup of coffee. In fact, in many places around the world, it's considered the epitome of a civilised way of taking a break in the afternoon. Much as I love you, friend, it's not as if she doesn't deserve a break from you from time to time."
And then I watched this and discovered I've been an idiot for at least 20 years.
I hasten to add that it's not a bad thing discovering that I've been an idiot. Suddenly, the world - and my friend - make a lot more sense.
So, thank you again. It's a tremendously pleasant feeling to suddenly understand something.
(I'm still not going to laugh at my friend's jokes, though. His wife's clearly a martyr who's spent the last 30 years of her life doing charity work by not divorcing him and his jokes!")

I make these fairly frequently as its super fast when your about to have your evening tea or coffee and the urge for something fried hit you.. So a little tip, I just use a zip lock bag and snip a corner off.. The other is I use a small 8 inch saucepan I have with just about 4 inches of oil.. So this way you don't need too much oil and however you pipe it in you get uniform rounds which are the perfect size.

About the home made funnel cakes. I used to take my kids to county fairs in other states when they were 12-14 years old like you said a lot of fairs are no longer so yes now my kids are coming home from military and college break. ]we are ready for something sweet, comfort food that we love to create memories but in a short period of time. When my kids are by themselves they can prepare this. Thanks for the recipe. Your tutorials are very informative and motivational. i think the main difference between funnel cakes and jalebi is jalebi has yogurt and yeast in the batter and its left to ferment overnight, so it naturally becomes hollow when fried at the right temp (i have failed every time i tried at home). indian sugar syrups are measured by taar (thread) not temperature.. jalebi and boondi ladoo are both 1 taar.. the syrup has some lemon to keep it from crystallising, saffron and cardamom.. i think the persians call this zalabia

Those are (or were) the typical dessert sold to tourists in Southern Tyrol - they call it "Strauben" there. While also dusted with powdered sugar, the main difference seems to be that they're poured in a shallow pan as a spiral and meant to be shared among 2-4 people. I think lingonberry jam was also on the plate (essentially lingonberry is substituted with cranberry in North America) and we mostly had a "Brettljause" with the local ham as dinner before (so a warm dessert to follow a cold dinner).

This activity required several parents to help with the funneling... several pots of oil, and yards of paper towel. It was aways a HUGE hit. Funnel cakes or "Elephant Ears" are a big deal at the Indiana State Fair.

Because I have multiple disabilities, I'm worried about my comfort and safety. So as a result, I would use a deep fryer, that which has temperature control built into it. The sweet treat, is called a funnel cake here in the United States and Canada and possibly in Mexico, although they might call it by something else in South America. Furthermore, in other countries and contients, that there are definately different variations which are very similar to the funnel cake, not only in Europe, but also in The Philippines. I just know that the funnel cake originated in Pennsylvania's Dutch country around 1879. It was made of yeast of first but that they later came up with the baking powder version. Thank you for sharing this dish with all of us at home! My favorite toppings, are apple and powdered sugar!

Funnel cake is the best. I'm sure this is delicious, but nothing and no one beats Knott's Berry Farm's funnel cakes. 😋

We have a different recipe for this here in India but we call them jalebis. They taste awesome with rabdi. Maybe these will too!

Funnel cake is my favorite treat to have at the fair! I usually just have it with a ton of powdered sugar, but I saw a video where Josh Weissman made a churro one with cinnamon sugar and carmel and id love to try it that way. ❤❤❤

I'm in Australia and your lemon tart recipe video appeared by chance yesterday. I've never heard of funnel cake, but I feel cinnamon sugar sprinkled over would be good 😋😊

I love funnel cake! This looks so good. 😊
At the strawberry festival they pile on strawberries in like a syrupy sauce. But I like it just with the powdered sugar.
