You can also buy sickle sections that are more "pointy" and about 1/2 the width of those shown in the video. Also the sickle sections are available in a serrated version, as shown in the video, or a smooth knife edge. These would be available at any ag store (like John Deere, Case, etc.) or likely on Amazon too.
My biggest concern about this modification is that the gearbox at the end of the trimmer head could perhaps be damaged or the gears stripped if the blades hit a hard, immovable object. Other types of trimmer heads can absorb the shock so that the gears don't experience shock forces to nearly the same extent as with this setup.

That blade is meaner than a swarm of angry hornets. That blade goes through everything effortlessly like a glowing hot knife through a stick of butter. If it was mine I might tack weld the cutters and also use the bolts. Just so I know the bolts can't break and the cutters can't fly off at 10,000rpm. That's the only part that scares me a bit. Oh by the way is that a Stihl FS-120 or 250. Looks and sounds alot like my 250. They are absolute beasts.
If he uses a spot weld on the bolts. And then grinds them. I guarantee you the bolts won't move

Gee, I have a store bought triple edge cutter much like this. Been using it on my Stihl FS85 For years. And I didn’t have to find a machine shop to make the center piece! But your design is much safer than others I’ve seen. It’s hard on engine and shaft when cutting saplings. You need much torque to cut heavy stuff.

If you are truly a professional brushcutter user, you should know how dangerous this is. I hope you are wearing steel toe boots and leg protectors for when one of those ends comes at 10,000rpm. So much easier to buy the correct Stihl brushcut blade. At least you managed to fit the thrust washer the correct way up in this video.

Why are the back edges of the blades sharp ?
My guess is that the cutters they're meant for are set up in counter-rotating pairs/sets. Making both edges sharp means you can use the same blade for either direction, instead of one set of blades for clockwise rotation and another set for counter-clockwise rotation.
