    SUEHIRO Ouka #3000 Grid is soft but cuts fine. But the steel of the cleaver is also soft (about HRC 55-56).

    My favorite part of this excellent knife sharpening video is the gradually decreasing glass of whiskey. Im gonna have to start adding that to my technique!!! 😂😂

    sorry i’m new to sharpening cleavers. what angle are you using? are both sides the same? i hear mixed opinions. some people sharpen the forehand side with an angle and the backside flat.. so i’m kinda lost. any help wound be appreciated. thanks.

      Hi! Think about blade height. Gyuto, Petty, Santoku and Cleaver are not the same. The distance can mess up your eyes. If we use the same angle, the distance between spine and stone is different on these different knives. You can try 20-22 degree.

    would you finish with the rika 5000 now you have the stone? which finishing stone (ouka vs rika) would be preferred if sharpness is the only priority? thanks.

      Hi! Rika can be the last finish stone. 5000 grid is good enough.

    Err am I imagining or does that seem to leave even more of a mirror polish than the Rika 5000??
    Also would you suggest getting the Rika 5000 or the new Cerax CR-6000-W ?

      Hi, both are not mirror finish. Naniwa Pro 5k gets more mirror than both.

    Nice job ! I'm also fan of Suehiro, i got the Cerax #1000 and been using it for 4 months now. I like medium softer stones. Not too soft, not too hard. I'm going for Ouka 3000 soon aswell. I wonder if Cerax 3000 grit acts and feels same as Ouka 3000?

      Hi! Thank you for your message! I assumed you are talking about New Cerax 3000 grid? Because Cerax doesn't have 3000. New Cerax is better than Ouka. Ouka is very basic one.

      They are almost the same. New Cerax is slightly better.

      Yeah, Cerax 3030 has two cracks on it. I didn't know how it got those cracks. But I guess it might be the stone is too thick. Inside the stone was not easy to dry if store in box. I stored it in box, which was a big mistake. If I leave it outside, I think it should be better.

    hi, how fast cerax 1k to remake edge if not have atoma 1k? The knife is stainless steel?

      To remake edge, I suggest to go on 180 - 220 grid. This is the best choice. Cerax 1010, 2020, 3030 (1k) are not really designed for that task. 320 to 700 grid is designed for very dull knife (nearly no chip).

      If I may, I'd like to suggest Imanishi Bester 700 grid. Way faster than Cerax 1k and also faster than most of 400 grid on the market.

    看到以前的影片,原來版主以前也會用金剛石板修崩口。近年來都改用低目數的磨刀石(LD180之類)原因是什麼?
    是磨刀石研磨的細緻度還是比較高嗎?

      之前那个国产的金刚板太重,而且衰减神速。后来用了atoma,但是磨刀衰减也会快。但修平砥石却能用好久好久。人总是在不断的进步的。所以我留着之前的视频。能看到进步。

      @@tailibaba 深有同感,我之前也買ATOMA來修崩口,但只修幾把剁刀,我就能明顯感覺到鑽石顆粒變細了。立馬改來當修整石來用,可以用很久。

      Suehiro is different from Naniwa. Formula is different.

      Yes, Cerax 3030 is the one with over width. Cerax 2020 has the same size as 1010 but 50mm in thickness.

    What are the measures of the 3000 ouka? Because the big one I found it only attached to the non-slip base.

      There are actually two different serial numbers. If you look at Suehiro official site, the one with “DN” has no base.

      @@tailibaba In the meantime I had understood. Except that in European sites I can only find the one with the base. Who knows if it is possible to remove it if I need it. Thank you

      I think you need to have a long steel ruler. And then it should be ok to remove. But most of people damage the stone a little bit.

      Suehiro uses a kind of epoxy which can be softened in the oven. Put the stone in the cold oven. Heat it up slowly to 100 C. Better to heat it up in steps of around 20 degrees. Wait for 10 minutes after each step. Then at 100 C take it out and use little bit of force to get the base of. The stone has to be completely dry before you do it. It worked for me with the Cerax 5000. It will not work with other brands like Naniwa. They use another kind of epoxy. Try it at your own risk.

      Chinese knife makers can only make knives which looks beautiful. Because most Chinese think nicely polished is high quality.
