Oh wow, this is such a gorgeous and amazing recipe. I remember when I was 11 or so, being invited to lunch at the house of a close friend and colleague of my father's in a London suburb. His wife made the most exquisite food, so aesthetic and subtle. Tea eggs and chicken I remember eating, beautiful to look at and delicious. I almost thought I had imagined it. Thanks for this! Kindled a lovely memory. Now, to actually make it...

Oh, my... I never realized that a wok could be used to smoke like this... I'm gonna have to try this method for smoking with this recipe and others. Fascinating technique, which means it's an automatic add to my recipe list! Can't wait to try it!

Never would have thought about smoking with tea, fascinating! That rub also sounds amazing. I’m thinking sprinkled ontop of something like a poke bowl would be great too

Did a similar smoke recipe of James Maetin with tea rice sugar etc. Made a tinfoil tray and smoker and put it on the BBQ - it was really good, but this looks nicer with the rub and steamer stage. Will definitely try this!

My kitchen vent doesn't work good so all the colors of my cooking steams are like an abstract design on the kitchen ceiling Told my family it reflects am a good cook.
If you marinade over night, do you do it in the fridge or on the counter at room?

I do american bbq, wonder if I can put a spin on this...
Might just give this a go on the Weber bbq for something a bit different. Can take this up to smoking stage say day beforehand?

My local restaurant makes a smoked chicken starter using bite-sized pieces of chicken breast. Could I use the same recipe, cutting back on the times?
