French Onion Soup

  • RECIPE:
    French Onion Soup
    Servings: 4-6
    Ingredients
    4 Tbsp. olive oil
    2 Tbsp. butter
    6 cups yellow onions, thinly sliced
    1 tsp salt
    1/2 tsp sugar
    3 Tbsp. flour
    6 cups beef stock
    1 cup white wine
    1/2 tsp ground sage
    1 whole bay leaf
    1 loaf french bread, or baguette
    2 Tbsp. olive oil
    1/2 an onion, grated
    3 Tbsp. cognac (optional)
    12 oz swiss cheese, grated
    salt, to taste
    pepper, to taste
    4 oz parmesan cheese, grated
    Instructions
    Preheat Oven To 325˚F/160˚C
    1. In a large pot over medium-low heat, heat olive oil and add butter.
    2. Once the butter is melted, stir the onions and coat with oil and butter. Cover and cook for 20 minutes, checking occasionally.
    3. Turn up the heat to medium-high. Add 1/2 tsp salt and sugar. Stir & keep cooking until onions are brown and caramelized. (the bottom of the pan will develop some browning, it’s very important!)
    4. Stir in flour one tablespoon at a time and cook for about 30 seconds.
    5. Add 1 cup of the beef broth. Use a whisk to scrape up (deglaze) the browned bits stuck on the bottom of the pan.
    6. Add the remaining 5 cups of beef stock, wine, sage and bay leaf. Bring to a boil. Reduce heat and simmer, uncovered, for 40 minutes.
    7. In the meantime, cut the french bread or baguette into 1/2 inch thick pieces. Brush with oil on both sides and bake at 325˚F/160˚C for 30 minutes, flipping halfway. Once they are done, increase oven temperature to 350˚F/175˚C.
    8. In an oven safe bowl, pour the onion soup, filling about 3/4 of the way full. Top with a piece of baked french bread, and generously sprinkle swiss and parmesan on top.
    9. Bake for 2-3 minutes or until the cheese has melted completely and become slightly golden.
    10. Serve & enjoy!!

    idk why but this just reminds me of that episode of Kitchen Nightmares in which Gordon complained about the lack of onions in the french onion soup and then the owner just shoved a bunch of raw onions in it and served it back to him lol

      In fact, it is supposed to be burnt at the bottom! The wine is added partly to “deglaze” the bottom of the pan - to remove all the grit.

    They did it wrong. Swiss cheese yes but you meant to you thinly sliced load toasted on one side, with GRUYERE cheese! Put the cheese on the bread once grated and put that in the bottom of the bowl. Then pour the soup on top! That's what melts the cheese and makes the soup infuse with the bread properly.

    They did this in the wrong order... you're supposed to add the sherri once your done cooking the onions to deglaze the pan, not once you add the beef stock

    Thanks for the only real french Onion Soup on CZcams! The Secret is to let the onions burn down with a little flour. Thats why it looks dark brown. All Ingredians where chosen good. Maybe more Stock and less wine.

    Just made this for the first time using this recipe. The recipe is all over the place. Written recipe doesn’t require the extra 30 minute baking time and the salt measurements are skewed. It came out fine baking the soup for 5 minutes instead of 30. Next time I make it, I’ll use more stock and no wine

    White wine should go in after the seasoned onions caramelize, you gotta deglaze the pot so nothing burns and you get all the flavour

    Cook the onions for 20 mins.
    Simmer for another 40 mins (while baking for 30 mins).
    After all done, bake everything again for 30 mins and broil for 3 mins.
    1 and a half-hour spent just to eat a bowl of onion soup?
    No wonder fast-food are getting more and more popular in a fast-paced life we live these days.

      Naked Pony Je ne dis pas que personne n'en mange, c'est même très bon. Mais avouons que ce n'est pas le plat auquel on pense en premier, qui on réfléchit à un plat typique de la cuisine française. Alors qu'à l'étranger, c'est l'un des premiers plats cité.

    First mistake was burning the bottom of the pot and then whisking it. Whisking it scrapes the burnt residue and alters the flavour of the dish

    I bet it would look better if you added a slice of cheese instead of shredded cheese so it'll coat the entire top of the soup and not just the bread.

    lol all regular french onion soup is smothered in cheese. thats just how it's made, if it wasn't like that, then it wouldn't be french onion soup. so if you can't complain about something thats meant to have cheese having cheese. it just doesn't work that way.
