I was never the biggest fan of Attack of the Clones, but "Across the Stars" is an amazing piece.
The music of the prequel trilogy is pretty good. The story and acting is cheesy indeed though, but still better than 80% of any modern movie.

Of all the themes in Star Wars, Across the Stars is definitely the one that stuck with me the most
It really has that certain tune to it! It's so interesting and nice that we all have our favorite pieces from the score. Or simply ones that, like you put it, stuck with us. For me, I think, it would be the Force theme (yeah, I know, I'm lame 😅). Or the Imperial march aka Darth Vader's theme. Both are kinda catchy...

Attack of the Clones went from my least favorite to one of my favorites in the franchise--maybe my favorite overall of the prequels. A lot of that is the score, but some of it is Hayden's and Natalie's acting. Some of their earlier interactions in the movie feel a little stilted and awkward, and he comes off hotheaded and overbearing, but his character draws a fire out of hers, and hers draws vulnerability and softness out of him, and in this scene, I believe every bit of their love for each other.
The Slave Boy and the Queen both sacrificed for the other, and though their love was tampered with by Palpatine, you could see the times when they truly loved each other!
Palparine: "Ok, time to plant some nightmares."
Anakin: "Oh no, my wife is gonna die!"
Palpatine:"Oh, yes, but I can teach you how to prevent that."
Anakin:"Wait really? You can do that?"
Palpatine:"Oh yes, now go kill a bunch of children for me."
Anakin:"Ok."
Palpatine:"Wait really? Just like that?"
Anakin:"Yeah, nothing I haven't done before."
Palpatine:"Oh wow! Ok, I clearly made the right choice for an apprentice."
Padme: "Anakin! What are you doing?!"
Anakin:"What?"
Padme: "I heard you did terrible things, like murdered a bunch of children!"
Anakin:"Who told you that?"
Padme: "Obi Wan"
Anakin: " *OBI WAN?! HE'S LYING! WHAT ARE YOU DOING SEEING OTHER JEDI BEHIND MY BACK?!* "
Padme: "Anakin, calm down, this isn't you, come with me, we can go as far away from all of this as possible, please! I'm about to have a baby! We can go to Naboo and get away from all of this, please, I love you!"
Anakin: "What are you talking about? That's not gonna save you, only my new powers can! And when I'm strong enough, I'm gonna kill Palpatine and we can rule over the galaxy! Together!"
Padme: "Obi Wan was right, you have changed."
Anakin: " *HE'S TURNED YOU AGAINST ME!* "
Padme: "No Anakin, it's not like that!"
(Anakin proceeds to choke his pregnant wife in the most toxic Douchebag way possible)
Obi Wan: " *LET HER GO ANAKIN! LET. HER. GO.* "
Anakin: " *YOU TURNED HER AGAINST ME!* "
Obi Wan: "You've already done that yourself!"
(Obi Wan checks Padme's pulse)
Obi Wan to himself: "Ok, she's still alive, thank goodness. I hope the child is ok too."
Anakin: "Either you're with me or you're my enemy."
Obi Wan: "Only a sith deals in absolutes."
Anakin: "Well yeah, I murdered a bunch of children!"
Obi Wan: "And you choked your pregnant wife you piece of $#!& Ok, that's it, I'm ending this, I'll do what I must."
Anakin: "You'll try."
(Epic lightsaber battle ensues)
Obi Wan: " *YOU WERE SUPPOSED TO BE THE CHOSEN ONE! YOU WERE SUPPOSED TO DESTROY THE SITH! NOT JOIN THEM!* "
Anakin: " *I HATE YOU!* "
Obi Wan: " *YOU WERE LIKE A BROTHER TO ME ANAKIN! I LOVED YOU!* "
Anakin: " *I HATE YOU!* "
Obi Wan: " *ALSO, WASN'T SAVING YOUR WIFE THE WHOLE REASON FOR YOU TURNING TO THE DARK SIDE IN THE FIRST PLACE?! LIKE THE WIFE YOU JUST NEARLY KILLED MINUTES AGO?!* "
Anakin: " *UM, I UH,... I HATE YOU!* "
Obi Wan: "Ok, that's it, I'm gonna leave you to burn here now."
Anakin: "What?! You can't do that!"
Obi Wan: "Yes, I can. And I'm going to take your wife to the hospital because guess what? *SHE'S IN LABOR!* "
Anakin: " *HEY! GET BACK HERE!* "
Obi Wan: "Oh, and I'm taking this."
Anakin: " *NO!* "
(Anakin proceeds to burn)
(*Burning noises*)
Palpatine: "Still alive! Get him to my special hospital. I have plans for him."
Palpatine: "Arise, Lord Vader."
Vader: "Where is Padme? Is she safe? Is she alright?"
Palpatine: "What? No! Of course she's not alright! You choked her you idiot! Uh, I mean, it seems in your anger, you killed her."

Leia's connection with the Force is more empathic, enabling her to sense things others cannot. It's still a massive retcon on George Lucas' part. I grew up with the whole backstory of Luke and Leia's mother separating her twins and going into hiding on Alderaan with Leia where the (unnamed at the time) mother died of undisclosed causes a few years later. Hence Luke's line, "I have no memory of my mother. I never knew her." Leia, for a short time, did know her.

Padme’s story is truly tragic. Really curious what would happen had she lived. Her legacy should be explored more like how we now get things from Mon Mothma, Ahsoka, etc.
Hehe, I think there are actually one or two fan fictions (like, proper ones) made on that particular topic. Also, I just recently learned there might be a novel or two exploring her backgrounds more, in essence, diving deeper into who Padmé Amidala was, so those are something to look for.
But if you mean a story that has, like, point of views from her friends and allies (like the ones you mentioned), I don't know if there is something like that. Now that would be an interesting read/watch!
