When was the last time you were at a wine tasting and someone described a wine having notes of ‘Banana’? Blackberries, yes; plums, yes; even rice gets a mention on your average wine list - but bananas? Not so much. That’s the really special thing about banana wine - it’s so small scale. You won’t find it in any store, because it isn’t mass-produced, so if you’re lucky enough to be offered a glass, you can be fairly certain that the wine has been lovingly produced by your host themselves, or picked up on an exotic expedition. Either way, the distinctive sweetness and tropical notes of the wine will bowl you over and give even the most seasoned wine expert a completely new tasting experience.
Banana Wine is more of a health tonic and helps control your blood pressure while aiding digestion. This fruit wine recipe is loaded with potassium, manganese, and vitamins and is most favored by the health-conscious people. 1-kilo robusta banana
10 grams of raisins
3 to 4 pieces of cinnamon
5 to 6 pieces of cloves
3 dry red chilies
10 to 12 pods of cardamom
Half teaspoon of yeast
Two liters of drinking water

As you mentioned I have kept it for a year. I thought it might weak. But it was strong and crystal clear like Lemon Topaz. It tasted great and I enjoyed it when I returned from Abu Dhabi after 10 months, last November end. So in total it was 11 months from Christmas before last.

I have mixed the ingredients on Sunday. Primary fermentation going on. Now it's nearing its end of first week. Very excited to open and see it on Monday.

After transferring to the bottle, there is white froth on the top. Does that mean the wine is spoilt? It is smelling good, but there is gas when the cap is opened. Please advise, thanks in advance
I guess you might have to strain it away. I feel if there is no bad smell or taste coming out then the wine, it is go to go. I hope you are stirring it every day for the carbon dioxide to escape the wine maker.
