    Have you tried this using a wide pan on the stove top? A pint takes about 15-20 minutes over low (~90 C) heat so it's barely simmering. You can watch it start to thicken by dragging a spatula through it. If you over do it, you can just add some heavy cream back into it.

    I have watched many recipes for clotted cream today. This is the very best one! I like that you use a very shallow pan. I think that makes a difference in the amount of milk that was left. And, the clotted cream looked perfect. I have one question, though: Did you use raw cream, pasteurized cream, or ulta-pasteurized cream for this recipe? Thank you. Watching from Ohio, U.S.A.

      @@tastemadeiraq - After reading your reply, I tried it and it worked great! I had no idea it was possible to make clotted cream using ultra-pasteurized heavy cream. Everyone always told me that ultra pasteurized wouldn't work. But, you proved them wrong, and now I have, too. And, it tastes soooo good, too. Thank you very much for taking the time to answer my question. That was nice of you to do that. I truly appreciate it. :)

    Sorry I have to ask. I've never run an oven for 12 hours straight. Mine is a conventional oven. Is there a different kind of oven required for this?

    Hi. You mentioned the oven temperature on the lowest setting. What temperature was your oven since every oven is different and did you put for 5 hours or 8. It’s a big difference. Also did you put on the lower rack of the oven or middle?. Thanks

      Put it in the lowest temperature your oven can go ! I said 5-8 depending in your oven how hot it runs but once you see the upper layer got a little yellow take out and let it cool down completely then put in the fridge for one day ! Hope I was clear :)

      I did the recipe at 90C for about 12 hours, and it works fine. Just keep an eye on the top layer until it's a nice buttery golden color.
