When you sun dry them, we call that Koko Fa'alā and there,are still those that do it that way butmajority of families nowadays, Fa'apa'u the koko over open fire. Each to their own. The stem inside that holds the beans is called the fuge. You should eat it, its actually nice. Well done ladies.
We used to suck on the seeds and let them dry out in the sun for days. We eat the fuge. I love, love, love koko samoa because of my grandma. I was always with her when she makes it and then ate the roasted bean instead of putting it in to the tanoa lol. You guys are so much fun.

You don't roast the cocoa in the sun, you dry the cocoa in the sun, but you can roast the cocoa on fire fresh off the cocoa tree or dry cocoa. I love to drink roasted cocoa off the tree.
