  • Transforming neck bones to taste like oxtails involves infusing rich and savory flavors into the meat. Oxtails are known for their depth of flavor and tenderness, so achieving a similar taste with neckbones requires careful seasoning and cooking techniques. Here's a step-by-step guide:
    Ingredients:
    Neckbones
Oxtail seasoning (or a combination of herbs and spices)
    Garlic
    Onion
    Thyme
    Salt and pepper
    Browning sauce
    Beef broth or stock
Vegetables (onions, carrots, tomatoes) for added flavor
    Ketchup (optional)
    Habanero Pepper (optional)
    Butter beans
    Oil
    Instructions:
    Preparation:
Rinse the neck-bones under cold water and pat them dry with paper towels.
Season the neck-bones generously with a mixture oxtail seasoning, thyme, and pepper Onion. You can use a pre-made oxtail seasoning mix or create your own blend.
    Browning Sauce:
Drizzle Browning sauce over the neck-bones. This will add depth and color and flavor to the dish.
    Marination:
Allow the seasoned neck-bones to marinate for at least 30 minutes to let the flavors penetrate the meat.
    Searing:
Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat.
Add a small amount of oil, and sear the neck-bones on all sides until they develop a golden brown crust. This step enhances the flavor by caramelizing the meat.
    Aromatics:
Add aromatics like chopped onions, thyme to the pot. Sauté until the vegetables are softened and aromatic.
    Liquid:
Pour in enough beef broth or stock to cover the neck-bones. The liquid will help tenderize the meat and create a flavorful base for the dish.
    Simmering:
Lower the heat to a simmer and cover the pot. After about 30 mins add the carrots, tomatoes, ketchup and habanero pepper.Let it cook slowly for an extended period, allowing the flavors to meld and the meat to become tender. This can take 1.5 to 2 hours or more.
    Adjusting Flavors:
Taste the broth and adjust the seasoning as needed. You might need to add more salt, pepper, or to achieve the desired oxtail-like flavor.
Add the butterbeans at the last 15 mins of the dishes on low/ med heat and stir.
    Serve:
Once the neck-bones are fork-tender and the flavors have melded, serve them hot. You can enjoy them with rice, mashed potatoes, or your favorite side dish.
By following these steps and paying attention to the seasoning and cooking process, you can enhance the taste of neckbones to resemble the rich and savory flavor profile of oxtails.
