  • In this video, I cook a simple, old-time favorite in cast iron - fried potatoes and onions. Featured in this video is my new cast iron AUSfonte sauteuse pan from SOLIDTEKNICS, based in Australia. This is a pretty amazing pan with a handle that does not get hot. Definitely a solid player in the world of cast iron!

    looks good man. i've been doing them the same way for a long time, with one exception. I cook my bacon first, then use the bacon grease to make my potatoes and onions. then at the end i pour in some scrambled eggs. once the eggs are done, add the cooked bacon and crumble/stir. dump it all in a bowl, throw a tortilla in the hot pan for a few minutes on each side, plop in your filling (add some shredded cheese and salsa if desired) boom you got the best breakfast taco ever. you'll be hooked.

    Thank you sir....you have invoked the memories of mom and grandma, you're speaking to my soul with your fried potatoes and onions. Perfect technique pre-cooking the potatoes and adding onion later...they burn so easily if added early.

    I just made this yesterday and I'm just seeing this video for the first time today. Hmm...lol. I season them exactly the same way too. But I used bacon grease and I covered them with cheddar cheese and runny fried eggs. 😍
    I've never considered microwaving the potatoes first. That's pretty genius! Usually I start to fry them, then cover for a few mins to steam them, then fry some more. But I see that this removes a bit of seasoning from my skillet. I didn't notice it on the food, but on my towel when I wiped it clean.
    I'm fairly new to the cast iron world. I have a 10 year old Lodge 8SK (so far that's all) that was gifted to my mom but was never used and sat in the basement to rust. I restored it several years ago (including sanding to a smoother finish) and put a couple coats of seasoning on but I was still afraid of using it for a long time. Finally I started re-seasoning and using it a couple weeks ago and it's quickly give from light brown to bronze-ish to very dark brown.
    I've been using it almost everyday or several times a day since. I've never had fried or pan-seared chicken or potatoes come out this good EVER. I make them pretty good to begin with in my mom's 50+ y.o. stainless steel but they were phenomenal in the cast iron! ❤
    BTW that is a GORGEOUS skillet! I only just heard of that brand today in another video and I'm in love after watching you cook in it.

    Jeff, absolutely perfect job on those potatoes!! Fried potatoes can be tricky to cook without turning into mush and you did it absolutely spot on!! I love that sauteuse pan!!!

      +TheWolfePit I would LOVE for someone to tell me how to get fried potatoes right in a cast iron. I have these damned potatoes in a skillet for over an hour at almost medium heat and whats in the skillet is either mush or burning to the skillet. Now the damned dog is whimpering under the table. :)

      +Aaron Zimmerman VERY minimal turning will help. The more you turn, the more the potatoes steam and break down to mush. That poor dog!!! LOL Hope this helps!

      +Aaron Zimmerman What Jeff said. It took me a few years to realise you don't have to turn potatoes every few minutes, unless you like mushy taters. Now I set a timer and walk away, or I wait until I can smell the browning before turning. You can think of it as the 3/4 rule in meat cooking. Cook the taters 3/4 done on one side before turning.

      Not mentioned: Start with the right potato (russet or baking potato). Almost medium heat is probably too low.

      @@1230mkelly I just went on line to find it and a company called Davey Jones had the skillet in a 24cm pan. it listed for $119. Im not sure of the size is in this video but 24 cm is about 10 inches.

    The biggest pro tip for me was their microwaving the potatoes. I don't know why but I've never heard of that before and it makes it so much easier and I can't wait to try it.

    Your suggestion of putting the cut up potatoes in the microwave for 5 minutes prior to the cooking pan was a very good one. I did this, followed your recipe, and the potatoes ended up being completely cooked in 14 minutes. And they were delicious.

    When my wife had breast cancer about five years ago, fried potatoes were the only thing she could eat. Your recipe saved the day! I added crispy bacon, cheese and sour cream to hers. She completely recovered from he cancer. Perhaps your potatoes were a cure?

    Thank you for your very informative video. I just purchased a Lodge 10" Chef pan from Amazon and was making a donation at the Salvation Army today and found a new 10" Lodge skillet. I seasoned both of them and my first attempt, other than the egg omelet I made this morning, was your fried potatoes. They were delicious!! :) I might try your Rib-eye steak next! I'm addicted to cast iron. Who would ever thought that was possible!!

      The best youtube channels for cast iron seem to be moving on to carbon steel. Both have the same horrible heat distribution (why his handle didn't get hot), and maintenance. -Both bad for pan sauces, and simmering acidic food. There is a cast iron group on facebook, but not a carbon steel one that I've found.

      I don't know where you got your information from but the handle didn't get hot because it was designed that way (with cut-outs in the handle). That was no accident and here is an actual quote from their website:
      "The handle also has a vented styling to reduce the transfer of heat to your hands when searing on the stovetop..."
      Also when you mention sauces and acidity in your post, these pans are designed for chefs and are actually chemically inactive, so you are incorrect once again.
      I do agree with you regarding maintenance though. You do need to rinse, oil, and heat them after cooking but hey, the alternatives are Teflon/non stick carcinogenic materials.
      Your choice I guess...

      'I don't know where you got your information from' -Scientific data sheets on the thermal properties of various metals, along with IR readings in my home kitchen, and the uneven maillard reaction on foods. Did you get yours from a commercial? If the handle were aluminum cast in the same mold; it would be hot.
      I don't see any chefs using cast iron. It's obsolete especially when you can get clad / disk bottom pans in the same price range.
      You don't need to rinse, oil, and heat them. You can wash them with detergent, and air dry if you know how to season them properly the first time.

    I made these after watching this video and added shredded cheddar. They tasted great. I went too light on the seasoning but was able to add a little salt and they were fine. Great way not to turn them into mush. I may try them with a 1/4lb of fresh bacon bits, chives, and possibly a side bowl of sour cream for dipping. Something like a pan fried baked potato. Thanks for the video.

    Great page, nice recipe. Cast iron is my go to cooking pan. Mine are cheaper lodge but they do the job. Thanks for the video.

    I've never seen SO much seasoning on anything! And looks like he added dried parcley flakes at the end! Lol sneaking more on!

    thank you for the nice presentation. Just a tip: If one uses potatoes that are a bit soft (not rotten, just soft), (no need to pre-boil).they cook all the way through without burning the outside, and they cook more quickly than potatoes that are just off the shelf from the store. I use ripe potatoes for frying, (like your video), for hash browns, and for potato pancakes. thanks again for the great video.

    Looks great! Just received my new unseasoned "Blue Bonnet" cast iron pan today advertised on Amazon as eight inches but that's the cooking area only, really nine inches with the sides of the skillet. A steal for 25 bucks! The cooking area of the skillet is very polished also. After seasoning for the 1st time I'll be eating some potatoes and onions, thanks!

    Great video! Just how I do my taters n onions. We've got several pieces of cast iron and use it all the time. Stove, oven, grill, fireplace, fire pit. Love it!
    Only thing is, you were makin me crazy using a metal spatula on your cast.

    I like a little chopped green bell & red pepper in my potatoes too, I guess those would be added last so they do not burn? Your potatoes are gorgeous, really a thing of beauty. I love that pan too. ❤️

    I sauté my onions first then add potatoes and it always comes out PERFECT!!! Need them in onions to caramelize 😉

    When I first got my 10" Lodge Blacklock skillet, I was really impressed with how I could touch the handle the entire cooking time. I still think of how much I like the handle.
    I use my square Lodge, 8" Lodge, and 10" griddle a lot. Since getting the Blacklock, I always talk to the other skillets, scolding them for their hot handles while reaching for a handle cover.
    I like my potatoes very brown like yours. Before I started using cast iron years ago, didn't like potatoes much because restaurants served them half raw too often.
    I cook some poblano peppers first. Add onions til the onions nearly done. Remove the veggies and cook potatoes by themselves. Add veggies back in to heat up last minute.
    Sausage gravy is tasty to pour over crispy cast iron potatoes.
