    The most praised "Four Major Cuisines" are Chuan, Lu, Yue and Huaiyang, representing West, North, South and East China cuisine correspondingly. The modern "Eight Cuisines" of China are Anhui (徽菜 Huīcài), Cantonese (粤菜; Yuècài), Fujian (闽菜; Mǐncài), Hunan (湘菜; Xiāngcài), Jiangsu (苏菜; Sūcài), Shandong (鲁菜; Lǔcài), Sichuan (川菜; Chuāncài), and Zhejiang (浙菜; Zhècài) cuisines.

      My favourite Chinese dish is 锅包肉 (guo bao rou) to which I was introduced during my first visit to Harbin (during summer a few years ago). I will be going back in December/January for six weeks so I will be most curious to see what is different.

    And for the first time I’m actually wishing Iona was also in the video. This video covered more than I can learn in one watching. Maybe you can make it into 8 videoed covering each style and 3 or 4 dishes from each style. That would probably be useful in decoding menus as well since food names often have nothing to do with the food the represent.

      ira handler I don’t think you’re meant to remember all the types, it’s just introducing you. I’m sure most Taiwanese and Chinese people couldn’t even list the 8 types from the top of their head.

    My favorite, probably 鲁菜 (Lǔcài), but I probably wouldn't say no to very many Chinese dishes.

    To those who are confused about cuisines and cultures, first and foremost is health. Chinese cater to their health and change their diets according to climate of the region-province and seasons. If a region is hot and dry, they will most likely be eating spicy and sweet foods like some type of indian cuisines. Those who like to attack chinese and chinese lifestyle choices have to learn a lot to avoid making a fool of themselves when they go out of their way to disparage chinese.
    Start with basic types of indian cuisines before progressing to chinese. If someone claim his cuisine is better, chinese should smile and make him walk the-talk(his own words for himself only) and stick with his own cuisine. Chinese have choices and do not need-want your agreement-accredition-business-validation.

    Do European countries have a favorite style Chinese cuisine. When the Spanish took over the old neighborhood seemed like Hunan went out of style. Don't know what style replaced it
