I’m glad you gave the Creeper a plant type because (as far as I remember) Notch confirmed creepers being plants and game theory used this as evidence for their theory.

3:11 Only now I realized that Iron Golem is like a Pokemon because we can summon it and it looks a bit like some otherworldly creature (The same goes for Snow Golem)
The skeleton horse screams ghost type to me
Ghost dark type works best for the wither
i think the Hoglin should be Fighting or Fighting/Normal because it hits pretty hard
and the Zoglin should be Ghost/Fighting or Dark/Fighting
I think all types of pillagers should be dark type

Wither and Warden would be post-game legendaries
Elder Guardian would be like Volcarona in B2W2 super strong pokemon hidden in big difficult to explore dungeon
Ravager and Iron Golem would be like Pseudo legendaries
Silverfish would be like Voltorb, Electrode, Fungus, Amoongus
You forgot about the Warden, but the type would be dark, fighting because it spawns in the deep dark biome and hits like a truck
Warden could possibly be Ghost/Bug

Bug - The Warden is covered in (or possibly made of) sculk, which appears to be a fungus; Bug-types are often associated with fungi.

creeper could change from grass type to fire type because of explosions
But explosions don't really mean fire in Pokemon. The move explosion is a normal type. And a lot of pokemon that learn it aren't fire type

I see what you mean, but explosion is a normal type move. Graveler learns explosion and is a rock ground. Voltorb and electrode learn explosion, but they're both electric.
