    Cook up a storm and share mouth-watering, finger-licking goodness with family and friends! The famous Singapore Chilli Crab is a flavourful combination of sweet and spicy chilli crab sauce and easily makes it a (inter)national favourite.
    Not to forget, dipping both the crab and the deep fried man tou in the sauce makes for the perfect bite, there's no doing without it! Do take note though, that the man tou browns REALLY fast while deep frying, so a tip from us is to constantly flip them from side to side!
    Will it be messy? Yes. Will you cry? Probably. Is it worth it? TOTALLY!

    2 Mud crabs
    5 tbsp Tomato Ketchup
    3 tbsp Sugar
    1/2 tsp Salt
    1 tsp Taucheo (fermented bean paste)
    5 tbsp Oil
    1 cup Water
    2 eggs, beaten
    coriander (garnishing)
    spring onions (garnishing)
    1 pack mantou
    Rempah:
    6 shallots
    8 garlic
    5 red chillies
    10 dried chillies (rehydrate)
    1 stalk lemongrass
    3 chilli padi
    6 candle nuts
    4 slices galangal
    1 green lime
    2 tbsp belacan

    omg.... i was given two giant live crabs and i had no idea what to do with them other than take them out for a walk.... wanted to pussy out and buy a box of chilli crab sauce mix..... lazy AF and kept psyching myself out that i would never do as good a job as a restaurant and ruining the two crabs. i however decided to stick it out and tried this recipe....
    i do not usually comment, but GURL! this recipe is legit! hands down THE recipe for Singapore Chilli Crab, unadulterated. no BS. i have eaten 47 years of chilli crabs and this recipe to me is as momentous as the leaked KFC fried chicken formula. the way the flavours should have been.
    the only thing i felt was a little unclear was the timing for frying the paste and such. the belachan or prawn paste has to be toasted over medium heat to a point when it feels a little dry and crumbly. the paste should also be really finely blended. the moment you pour in the blended mix, you have to EITHER keep moving the paste around at medium high heat to thoroughly cook the paste without burning (high stress cooking), OR fry everything at low medium heat and only medium high heat for last 5 mins to fully bring out the flavours (low stress cooking). i tried both methods and i prefer the low stress method because not only does the paste ingredients have time to mingle and mature, the paste would break down and allow the flavours to homogenate and fully temper. the low stress method took about 35mins until the paste noticeably darken but i feel that it is well worth the extra time.... i have since fried large batches of this sauce, up until just before the ketchup stage, portioned them out and frozen. whenever i want to cook, rejuvenate with more oil and some ketchup and you can use this with prawns, any kind of crab, lobsters, even pasta etc.
    heartfelt thanks to MEATMEN for sharing the recipe..... i have always thought that these sort of cooking videos are meant for clicks and as long as the food looks good, nothing else matters. fake recipes for an audience that would eat out 95% of the time anyway, so why bother? i truly stand corrected by this recipe. it is THE authentic recipe and really much better than the sickly sweet ketchupy versions you get at supposedly famous crab restaurants. this recipe is mind-blowingly full bodied, balanced and complete. i can now enjoy this dish anytime at a third of restaurant prices and double the quality.

    My family is vegetarian and im also allergic to crab 🦀😅so i used your chili 🌶️ crab sauce recipe but added vegetarian prawns instead! Still yummilicious! Love all your recipes as its versatile ! 👏 👏 👏

    Just discovered your channel. Good stuff. Question on one of the ingredients in this recipe. Candle nut is something I have used in the past. It seems this nut doesn't have any smell and not sure about the taste. But I noticed many recipes have candle nuts in it. Would be great if you can comment a bit on this candle nut.

    I really fell in love with this dish when I was staying in SG. The combination of tastes of chilli crab and mantaou was fantastic. The sweetness and peppery of chilli crab mixed with hot crispy mantou was awesome. Any way the thing that I really love was fried mantaou, it was a bit sweet, crispy outside and smooth inside. But now I am living in my hometown there does not have any packages of mantou in the stores. So do you have a recipe of mantou ? Coz I really love it.

    I made this recipe tonight.. it turned out super delicious, thanks a bunch! :D I'll definitely make it again. I used Dungeness crab since we don't often have mud crabs where I live (and Dungeness crab is extra-meaty). Yum yum!

      farah qureshi ginger can be use as replacement for galangai, as for thai shrimp paste it looks pretty close, we got to go get it to give you an answer for that.

      +Jason Wilson if you REALLY are crazy for spiciness like my dad, you can always use what we call Chilli Padi, or whatever is spicier but try to use chillies that have a fruity flavour instead of pure spiciness. It does add a lot of flavour.

    May i know, why fry the belacan with dry pan, then add oil? why not fry with the heated oil?

      frying in the dry pan is just to taste the belacan for the flavours to come out, fry it in oil alone might burn it.

      If you can’t find it where you are. Miso can also be a substitute. Miso is however slightly sweeter and has a more ‘refined/subtle/smoother’ taste

    Hi guys! Just tried this recipe a couple of weeks back and it is way too spicy! I am used to spicy stuff since I lived in Singapore for like forever, but do u guys really eat it that spicy?

      theMEATMENsg Hahah u guys are brave! Good job on all the videos! I love them! When i tried making this recipe I literally just used 1 chilli paid with seeds, or i de-seed a lot of them. Sometimes, I just use sriracha sauce if i want to make it a little more spicy. Still tastes the same and soo good! I fed 15 norwegians with it :P Thanks for this!

      That was the first thing I noticed. Too many chillies! No, it is not meant to be overly spicy. It is served at.Cantonese/ Chinese seafood restaurants known for milder food so the spice level isn’t excessive. The better restaurants do it with the right balance of fragrance, spice, heat, sweet, sour and savoury.

    What happens if I use both oyster sauce and taucu (bean paste) OR I should choose only 1? Too many diff recipes on youtube for making SIN Chili Crab 😅 Some even use aromatic herbs like lime leaves and Indonesian bay leaves 🤔
    I usually pick a recipe with the longest ingredients 🤣

      Just because dungeness crab is so expensive here, around US$50 for about 3 lb size of crab, so I need to decide which recipe/ingredients to choose wisely aka taste good so I wont waste $50 😅
