How To Cook JOLLOF Rice | Easy Jollof Rice Recipe
Jollof rice is a popular rice dish in West Africa and Nigeria. It is usually made with tomatoes, onions, spices, vegetables, chicken and long grain rice in a single pot. It is very simple to make and tastes really good.
NOTES :
If you don't like it spicy, use 1 scotch bonnet pepper!

3 cups of easy cook long grain rice
2 small - medium sized red onions
2-3 medium sized scotch bonnet peppers
2 medium red peppers (Pepsicum)
2 medium tomatoes
5-6 garlic cloves
1 inch ginger
1/2 cup of extra virgine olive oil
1/2 red onion (thinly sliced)
2 bay leaves
2 +1/2 tbsp of tomato puree
1 tsp of dried thyme
1/4 tsp of dried oregano (optional)
Salt to taste
1 tsp of curry powder
1/4 tsp of black pepper
4 cubes of vegetable /chicken stock
Hot water as required
