Well if any part of Africa had a chance it would of been South Africa......
the simple answer is that the michelin critiques work in a select number of countiries usually where the elite hang out. adding countires to thelist requirs mony time and recruting of new critiques.
Wonderful food in Morocco, Algeria, Tunisia, Cairo, West Africa, and South Africa. They should work harder on Africa. Keep in mind that Tokyo has more stars than Paris, so M is not totally eurocentric.
Why africa should have michelin stars only because is Africa?
Because Africa is huge with many countries and diverse and sophisticated cuisines, and because some of the food and some of the restaurants are awesome.
Africans are much more price conscious than Europeans or North Americans. The fine dining industry is a very volatile one. Chefs change jobs quickly, standards rise and fall relatively quickly.
Michelin guides are also typically funded by a countries tourism board. It's up to a countries government to decide whether its worth it to get Europeans to tell everyone whether African food is good or not. In Africa we simply rely on local wisdom on which is a great place to eat or not. And tourists in Africa don't seem to care either. They get good food, and good quantity of food, at great prices. In Africa, the main course is usually more than enough to fill and satisfy someone. People don't really go in for a three course meal, starters are often shared and desserts seldom ordered at the same place as the mains were. It's just a different dining culture here.

I agree, Michelin Stars don't define good restaurants! It would be nice to see some restaurants get the recognition they deserve though!
