  • This video demonstrates how to prepare a new marble mortar before your first use so that stone grit and powder does not get in your food. This process removes the marble stone grit and powder.     Great video, just what I was looking for! Though I did laugh at the garlic! "Add 3-4 cloves of garlic"....adds 34 cloves of garlic...

    Nice video. You make it look so easy! I'm always exhausted after prepping a new mortar and pestle. I've never used baking soda before, but it makes sense. Also, I always used rice along with corse salt for removing grit.

      Thanks for watching! I also use baking soda and a touch of water to clean after each use. I found the marble mortar is easier to prep than granite or lava rock.

    Once prepared, how do you suggest cleaning it after each use? I'm thinking about getting one.

      To clean after use, I like to make a paste with baking soda (about 1 tsp) and a little water in the mortar and use the pestle to scrub the mortar bowl. Then rinse really well and dry both well. You can also use soap and water, just rinse really well. I find the baking soda does a better job at removing stains from spices like saffron and turmeric. Thanks for watching!

    What kind of morter and pestle is this? I really like it and have never seen one before.

      The mortar is made in Italy out of Carrara marble and the pestle is made of beechwood. This set ideal for pestos and in general particularly good for less fibrous and/or less hard ingredients.

      This process will work with a granite mortar, but needs a little extra work to remove the granite grit.
      Repeat the step 2 with the coarse salt grinding a couple of times. If there is any discoloration showing in the salt (a little grey or grey-green) repeat until the salt remains white. If you notice any discoloration of the garlic in step 4, repeat the salt grinding step, then the garlic step before going on to the baking soda step.

      @@kavitasalian1237 The one I use in is 14cm / 7in which is the only size available in the US at Williams Sonoma. The manufacturer in Italy offers many sizes, both smaller and larger.       The exterior is 18cm / 7in. The interior is 13cm / 5in. Sorry about that mix up.

    I’ve seen the dry rub technique with salt or rice to smooth them out, but could you explain what the garlic step adds to the process? Does it need oiling, too?

    Step 1 is rinse with water.
    Step 2 is add coarse salt.
    But in the video it looks as if you removed the water first and dried?

      Yes, good catch. Remove the water before adding the salt. Drying is optional at this stage.
