One of Doom's most selfless acts was invading Hell with Doctor Strange to save his mom, in which he pretended to betray Strange to Mephisto so that his Mom would reject him and not love him any more, redeeming her soul and freeing her from Hell, then risked his own soul freeing Strange anyway, all just to spite Mephisto.
Mr. Fantastic once altered Doom's memory to make him think the Fantastic Four were dead hoping it would make Doom a hero and it actually worked, because the only reason Doom was a villain was to spite Reed.
Doom does evil to spite good and good to spite evil, he is actually peak fiction.

1. Be better than Reed
2. Make Latveria the greatest empire in history
3. Save his mom from Hell (completed)
4. Add all of world to Latverian Empire
5. Vengeance on everyone who wrongs him
6. More power to achieve 1 through 5
He once orchestrated an extremely bold and complex plan to resurrect the Thing and cure the Human Torch of a problem with his powers just because Reed couldn't do it.
As for his grudge against the Four, a) Reed is often considered the only scientist superior to Doom, and Doom dislikes that state of affairs, b) Reed warned Doom against the experiment that scarred and nearly killed him, c) the Thing sabotaged the experiment that scarred his face, so it might've been fine if it hadn't been for him (although Doom doesn't know that, also Reed cured his scars after Secret Wars when the universe was resurrected), d) the Four have screwed up Doom's plans more than anyone.
Usually when Doom throws down with the four it's personal, with anyone else he's trying to get something for Latveria/his own power. Or it's vengeance.
