It allows you to control things automatically without you having to manually do it. The most basic is volume automation like for building tension. The next most common is Filter cutoff and resonance. Like having a low pass filter slowly build up in the build right before the drop.
You can also automate the bypass on plugins so you could have the plugin come on in just 1 section of the song. Or have the reverb build intensity until it drowns the sound out and then comes back in or automate the release on a transient designer like on a snare build. You can use the smart controls in logic as macros and have a bunch of stuff automate all at once on one knob. Sky's the limit cause you can automate almost anything you can think of.
Great tip! Another automation tip is to right click and turn on Snap Automation, it makes guesswork of lining points up easy.
