I was once dining at what is probably the most famous restaurant in N.O. I asked whether the chef could make a Chambord souffle in stead of the chocolate and vanilla on the menu. And that I would pair it with I think Piper-Heidsieck Reserve demi-sec.
The chef replied that he would be delighted to make it. To say the souffle was superb is an understatement. Later the chef came to my table (I was alone) to ask why I chose that combination. I explained and he said that the dessert and wine were complimentary and they planned to add the Chambord souffle to the menu.

@@ashleyk5881 I didn't because my dining adventure occurred many years ago and I do not know the current status of the restaurant, have not read its menu and know no one who has dined there recently.
So I don't want a reader to be disappointed after having read my comments and then spending the considerable money to have dinner there. It is possible to find bad food and tourist-trap food down there...often at outrageous prices. On the other hand, the best crawfish etouffee I ever had was for a quick lunch at nondescript bar off Bourbon street.
Find out who won the most recent (or any) gumbo award and try that. I did that and it was spectacular. Nothing like competition bring out great results for the dining public.
That year it was at "Mr. B's". Enjoyed it more than "breakfast at Brennan's" or dinner at "Antoine's".

Best way to clean the bowl and the whisk is with a little vinegar. Best type of bowl is a stainless steel one. I add salt to my egg whites

Hola from Ecuador! Even though Ecuador has some of the world’s best chocolate, there aren’t many chocolate-centered desserts. Every time I make something chocolate, our Ecuadorian friends are amazed. I will try this recipe. We live at 9,000 ft above sea level, so I wonder how the altitude will affect a soufflé.
