both of these forces were under near constant attack for over a DECADE straight, holy shit

Yes. Ottos only managed to capitalize on a moribund Byzantine Empire at the end of its life. A Manzikert victory or Varna victory would have had Ottomans never happen or be just another foe the Byzantines overcame.
