Hi Laura. I have made this type of soup all my life but never tried it with the lemon rind. It's an absolutely amazing touch. You don't recognize the flavour as being lemon rind but it really brings it to another level. Thanks

Made this tonight and it was just perfect. The most time consuming part of this recipe is forming the meatballs and that didn't take much time at all. Thanks for sharing Laura!
I love this recipe. I use ground turkey for the meatballs but use her guidelines and recipe. The meatballs that cook in the broth are unbelievably tender
Your recipes are some of the best. I think the fresh taste of lemon zest is probably something similar to putting tomatoes sauteed in butter in chicken soup. It's a competing flavor with the chicken broth but I have come to like it. However, I think I will reduce the lemon zest by 2/3 for my first try. I might also slightly brown the chicken meatballs before sweating the veggies and add them back a little later between the pasta and the spinach. Hopefully, they don't fall apart.

Well done. I'm gonna give this a go this week ! I use local farm eggs, so yes... they get cracked onto a saucer, rather than a bowl. Easier to slide into the recipe, and easier to clean a saucer at the end. Just in case the egg is 'off', for whatever reason Even store-bought eggs sometimes miss quality control.

What does the 'ground' in Ground beef/ground chicken mean? Lovely recipe again! ive made the italian meatballs for EVERYONE in my family(The Netherlands) and they love it so much:D
For the meatballs she uses Parmigianino reggiano cheese. She explains that the soup traditionally calls for pecorino cheese but she doesn't like it, so she uses parm!

@divdawgd No, "weddings" have nothing to do with it. The term "wedding soup" is a mistranslation of the Italian language, minestra maritata ("married soup"), which is a reference to the fact that green vegetables and meat go well together.

I save my Reggiano rinds for when I make Wedding Soup! This is the best quick hearty meal to fix for a big group of people!

I read one time to put your meatballs in the freezer for about 20mins it helps them hold together in cooking.

A lady I work with says they do not have Italian wedding soup in Italy. Is this true? She from Genoa.
