Great video. But why should I use the access control in CDS Views instead of an authority check before the selection?

The AUTHORITY-CHECK can be used to check whether an action should be executed. In other words, whether the select should be executed. CDS roles can be used to restrict individual data records directly. Otherwise you would have to implement this with various selects.
CDS access controls allow you to restrict the access rights of users to individual data records of the selection result of a CDS model.
CDS access controls can be used to enable access control directly on the data records.
From an authorization perspective, a user should only ever be allowed to access the functions and data that they actually need to perform their operational tasks (principle of least privilege). This means that, in principle, a user should only have minimal authorizations.
