  • Portable soup is a meat broth that is condensed to solid form. It was a very common ration/survival food in the 18th century, and it can be used as a wonderful flavor enhancer in any modern dish. Making portable soup, however, takes a long time, and if you don't watch it closely, it is easily ruined. In this video, we show you a easy, nearly fail-safe way to make it at home so that you can take it to your next historical event or have it on hand the next time you need broth or wish to boost the flavor of your favorite dish or soup.

    When I made mine, I used chicken legs. I took the meat from the slow cooker, shredded it up real small, salted it, and dried it out on a low temp. It is WONDERFUL.

    Some portable soup, and some jerky. You would have a survival sandwich and probably the hardest sandwich to eat ever made.

      Problem is you'd have no teeth left afterwards. Lol. I know, I know. It could all be softened. A few minutes for the soup, a couple of hours for the jerky, about a week for the hardtack (used to be a Civil War reenactor so I am quite familiar with that stuff).

      Replace the jerky with pemmican.......break your pemmican up and throw it in a pan. Cook until the pan is nice and greasy. Pound your hardtack into small bits. Add it to your pan and mix until it's covered in the pemmican fat. Cook a little longer but do not burn. Add a little water at a time constantly sturing until you get a loose gravy. If needed add a little of your portable stew for flavored as well as what other berries and veggies you can procure. Cook until veggies are tender and enjoy.

    Beef shanks are high up among the most flavorful cuts on the entire animal. If you've not had it, try making a barley-beef or other grain / vegetable beef soup with them.
    Cooking times will be long, so it's a good option for pressure cooking to at least get the bulk of the tenderizing done. Otherwise a long simmer in the crockpot is the thing.
    If you live near a Vietnamese grocery, pick up a package each of beef shanks and flank, along with some carrots and the spice mixture for bo kho. Bo kho is a French-Vietnamese stew that's simply amazing.

    Our forefathers and mothers were so ingenious in finding ways to preserve food for as long as possible. Imagine being the first person to figure this out, you'd feel like a god. You effectively turned a whole bunch of your stock into a lightweight yet dense packet without much loss. It's stuff like this that enabled us to roam so far and wide and eventually settle on the entire world. We live in an age now where few or none of these incredible ideas have to be used by ourselves anymore, and without channels like this much would be lost on us. Thank you.

    I’ve done a similar thing with chicken stock before, reduced all the way down until there’s no water, poured into a container and frozen. Its easy to slice out of the freezer but i made the addition of pork hocks for extra gelatin.👍🏻

      I've done that with reduced concentrated broth, so I only filled the tray cubes half way. Then I put it in freezer bags and one cube makes a cup or so of broth. ​@@beatnik6806

    I remember my grandmother making this when I was very young, and I have to say, it really does add heaps of flavour to a simple quick vegetable soup. Stock cubes doo too, but the flavour this gives is very different.

    I'm really interested in the shelf life of this. Since fat is what can go rancid, and that is removed, then dried, I bet this has incredible shelf life if stored in a cool dry place. If it continues to dry out and harden with time I wouldn't store it in any kind of air tight container

      Fat generally doesn't unless there's still moisture.
      If you want food to last, kill the mould and bacteria etc, or take it out of the temperature range it acts in, or dehydrate it to prevent their growth.
      Things don't go rancid on their own.
      If you treat meat and keep it away from any contaminant it will never truly go bad. Though the flavour will probably change vastly.

    I gotta say, for some reason my favorite episodes are the ones where you talk about old preservation technique. Hard tack, portable soup, etc. Would you guys mind doing an episode on smoked and pickled foods as well? Like smoked haddock (although that was more of a German thing to be fair, but you get the idea I hope.)

      @@edrenajones5960 Cats have extremely efficient kidneys, to the point that they can actually drink seawater without any ill effects. It's not recommended to give cats seawater though its more like a handy survival mechanism.

    This is great! I‘ve been wondering for a long time if there was a way to make something akin to instant broth at home from the chicken broth or beef broth I freshly cook. As I‘m allergic to many foods and most instant broths contain at least one of those ingredients (and those that don’t aren’t always great tasting) it is very difficult to have a quick and convenient way of making soup. Plus I don’t have a lot of space in the small freezing compartment of the fridge to store large amounts of soup that I could just defrost whenever I need it. This portable soup may well be the answer to my problem. Thank you for bringing this old method to my attention! ❤

    I just finished up trying this my first time. Worked like a charm especially using a slow cooker. I love it and the leftover meat was used to make potted meat. Thinking of using it to make pemmican with the leftover meat next time. Loved it and the video made it easy as pie!

      @@jorenbosmans8065 no I haven’t tried that but I doubt you would have good results being as this is not the same as rendered suet used in making pemmican. It’s would be closer to jello than suet.

    I have made Portable Soup just like this and I agree, don't ever season it! The process of cooking down that much broth can throw off the flavors so it works better with a plain broth. I also know one easy way to dry it out once it's gelatinous. Lay it on some cloth, or filter paper, and put it on a box fan that is blowing downwards and drawing air past/around the whole mess. It's a bit like a dehydrator without the heat.

      Would it be ok to just add salt? I don't like meat cooked without salt and since we would be eating that meat i would want the salt cause it is just not the same when you add salt after the fact.

      It would probably end up something like marmite or vegemite once it had been reduced. Perhaps do something like a barbecue sauce? I use the same cuts of meat in a similar way, simmering them slowly in a homemade barbecue sauce. A richly flavourful sauce like that with the relatively-finely minced meat ought to not end up bland in the centre; simmer it in the sauce once it's been removed as in here for at least an hour and the flavour ought to penetrate it.
      I am going to have to try this for camping! When I bring cold roasts along I add the gelatin from it as well; I didn't know it could be reduced!
